Job Summary
We are seeking an experienced South Indian Chef de Partie (CDP) with strong expertise in authentic South Indian cuisine. The ideal candidate will be responsible for managing the South Indian section, ensuring food quality, consistency, hygiene standards, and smooth kitchen operations.
Key Responsibilities
- Prepare and present authentic South Indian dishes as per standard recipes.
- Manage day-to-day operations of the South Indian kitchen section.
- Ensure consistency in taste, portion control, and food presentation.
- Supervise and guide commis chefs and kitchen helpers.
- Maintain high standards of food safety, hygiene, and cleanliness as per FSSAI norms.
- Monitor food preparation to minimize wastage and control food cost.
- Ensure timely service during peak hours.
- Assist in menu planning and introduction of new dishes.
- Coordinate with stores and purchase team for raw material requirements.
- Ensure proper storage, labeling, and FIFO practices.
Requirements & Skills
- Minimum 3 years of experience as a South Indian CDP or Senior Commis.
- Robust knowledge of traditional South Indian cuisines (Tamil, Andhra, Kerala, Karnataka).
- Ability to handle high-volume kitchen operations.
- Knowledge of hygiene, food safety, and kitchen SOPs.
- Team player with good communication and leadership skills.
- Willingness to work in shifts, weekends, and holidays.
