The VP / AVP – F&B; Concept & Commercial Lead is part of core team responsible for evaluating and operationalizing every F&B; venture RMZ enters — across JV, franchise, and self-operated models. This role is the commercial filter and culinary authority within that te
am.The ideal candidate is a chef by training who has since moved into ownership of the numbers — someone who can read a menu and a balance sheet with equal fluency. You have run the P&L; of a standalone restaurant end to end, carrying full accountability for revenue, cost, and profitability. An MBA is a plus, but the non-negotiable is demonstrated P&L; ownership paired with genuine kitchen credibility.
Key Responsibilities
- Opportunity Evaluation
- Assess inbound and sourced F&B; opportunities — JV, franchise, and self-operated — and build the business case (unit economics, capex, breakeven, yield on cost) for go/no-go decisions.
- Apply a sharp,
numbers-first filter to every chance; protect RMZ from uncapped cost escalation that erodes returns.
- Commercial Model Inputs
- Work with leadership and partners to shape the right commercial model for each concept — operating splits, capex allocation, MG/revenue-share terms, and risk exposure.
- Hold the line on unit economics and capex discipline; know when to walk away from a deal.
- Concept & Culinary Judgment
- Evaluate brands, menus, kitchen design, and food cost viability; act as RMZ’s internal culinary authority when assessing operator partners and self-operated concepts.
- Combine culinary credibility with commercial rigour — equally comfortable challenging a chef on food cost and a partner on deal terms.
- Financial Modelling & P&L; Design
- Own the financial model for each venture and define the P&L; structure the operations team will run against.
