About the Property
It's a six-suite heritage estate in Jaipur, managed by Alt Homes, currently in pre-launch. Set within an orchard of roughly 1,100 orange trees, the property's F&B; offering is an intimate restaurant with indoor and outdoor dining and an events and experiences programme which is being built from the ground up, and we're looking for an experienced F&B; Consultant to shape it.
This isn't a conventional heritage-hotel restaurant brief. We're building a layered, land-forward dining experience rooted in Rajasthan and North India without cliché, that becomes a core part of the property's identity and a reason guests return.

What You'll Shape
Positioning & Concept: Define the food philosophy and long-term experiential direction, drawing on the orchard, architecture, and the slower rhythm of the stay
Menu Engineering & Development: Build the full menu architecture (breakfast, orchard breakfast, restaurant lunch/dinner, bar, supper clubs) with recipe cards, menu engineering, margin analysis, and a beverage programme spanning orchard-led drinks, wine, and cocktails




Procurement & Vendor Development: Finalise equipment and serveware specs, and identify Jaipur-serviceable suppliers
Kitchen Design & SOPs: Review completed civil work, optimise kitchen workflow, and codify Kitchen Operations, Front-of-House, and Events SOPs
Staffing & Training: Design the F&B; staffing model, support hiring for key roles including Head Cook, and deliver hands-on training through a full mock service before soft launch
Cost Control: Build food-cost tracking and a monthly F&B; P&L; structure, with training for the on-site manager
The engagement carries through soft launch and a post-launch audit so that what's designed in theory gets proven in practice.

Who We're Looking For
Proven experience building F&B; programmes for independent or boutique hospitality properties (not just large hotel chains)
Robust grounding in Indian regional cuisine, with the sensibility to innovate and reinterpre
