Role & Responsibilities

Restaurant Manager

- Oversee daily operations of a fine dining establishment, ensuring impeccable service standards
- Manage front-of-house and back-of-house coordination for seamless service
- Train, schedule, and supervise staff (captains, servers, runners, bartenders)
- Handle guest relations VIP arrangements, special requests, and complaint resolution
- Monitor inventory, supplier relationships, and cost control (food, beverage, labor)
- Ensure compliance with health, safety, and liquor licensing regulations
- Drive revenue through upselling, menu engineering, and event planning

Captain (Head Server / Section Leader)

- Lead a service team for assigned sections during service hours
- Greet guests, explain menus, take orders, and oversee table-side service
- Ensure timing, presentation, and sequencing of courses meet fine dining standards
- Handle guest preferences, dietary restrictions, and special occasions
- Assist management with side-station setup, wine service, and team briefings

Server

- Deliver polished, attentive, and personalized dining experiences
- Master the menu ingredients, preparation methods, wine pairings, and allergen info
- Take orders accurately and input them into the POS system
- Anticipate guest needs: refill water, clear courses, check satisfaction discreetly
- Maintain table presentation, cleanliness, and mise-en-place throughout service





Preferred Candidate Profile For all roles:

- Experience: Minimum 13 years in a fine dining or luxury hospitality workplace
- Education: Diploma or degree in Hospitality Management is preferred (not mandatory for servers)
- Languages: Fluent in English (Arabic, French, or other languages are a strong plus)
- Service Mindset: Naturally polished, poised, and guest-focused no shortcuts on standards
- Appearance: Well-groomed, professional presentation adhering to dress code
- Availability: Flexible to work evenings, weekends, and holidays

Manager-specific:

- Prior experience as an Assistant Manager or Supervisor in a 5-star hotel / standalone fine dining restaurant
- Strong P&L; understanding, budgeting, and staff management skills
- Certification in food safety (e.g., HACCP, ServSafe) and alcohol service

Captain-specific:

- Proven track record in a lead server / captain role at a high-end venue
- Extensive wine and spirits knowledge (WSET Level 2+ or equivalent is a plus)
- Ability to run a section of 46 tables under pressure without dropping quality

Server-specific:

- At least 1 year of serving experience in an upscale setting
- Excellent memory for orders, faces, and regular guest preferences
- Team player who stays calm under pressure
