About the Role Della Resorts & Adventure is seeking a highly motivated and detail-oriented Food Safety Officer to oversee and implement food safety, hygiene, and quality assurance standards across all food production and service outlets. The ideal candidate will ensure compliance with FSSAI regulations, HACCP principles, and international food safety standards while fostering a culture of food safety throughout the resort.

Key Responsibilities

Food Safety & Compliance

- Ensure compliance with FSSAI regulations, HACCP, GMP, GHP, and other applicable food safety standards.
- Develop, implement, and maintain food safety policies, SOPs, and documentation.
- Conduct routine food safety inspections across kitchens, restaurants, bars, banquets, and storage facilities.
- Monitor food handling, preparation, cooking, storage, transportation, and service practices.
- Ensure proper temperature monitoring, food labelling, stock rotation (FIFO/FEFO), and traceability.

Audits & Inspections
- Conduct daily, weekly, and monthly hygiene audits.
- Prepare the property for internal, external, and regulatory audits.
- Address non-conformities and ensure timely corrective and preventive actions (CAPA).
- Maintain audit reports and compliance records.

Training & Development
- Conduct food safety and hygiene induction programmes for new associates.
- Organise periodic training sessions on personal hygiene, sanitation, allergen management, cross-contamination prevention, and food safety best practices.
- Evaluate training effectiveness through observations and assessments.

Hygiene & Sanitation
- Monitor cleaning and sanitation schedules.




- Ensure proper pest control coordination with approved vendors.
- Verify chemical usage, storage, and safety procedures.
- Ensure compliance with personal hygiene standards for all food handlers.

Quality Assurance
- Conduct microbiological and hygiene swab sampling as per schedule.
- Monitor food quality and shelf-life management.
- Investigate food safety incidents and customer complaints related to food quality.
- Recommend preventive measures to eliminate risks.

Documentation & Reporting
- Maintain statutory records and food safety documentation.
- Prepare daily, weekly, and monthly compliance reports.
- Monitor calibration records for food safety equipment.
- Ensure licences and statutory certifications remain valid and updated.

Cross-Functional Coordination
- Work closely with Executive Chefs, F&B; Service, Housekeeping, Engineering, Procurement, and Stores to ensure food safety compliance.
- Liaise with regulatory authorities during inspections.
- Support sustainability initiatives related to food waste management and safe disposal practices.

Qualifications
- Bachelor's Degree in Food Technology, Food Science, Microbiology, Hospitality Management, or a related discipline.
- Certification in HACCP and Food Safety Management Systems is preferred.




- FSSAI FoSTaC certification is highly desirable.
- Additional certifications in ISO 22000/Internal Auditor will be an advantage.

Experience
- 3-7 years of experience in food safety, quality assurance, or hygiene management.
- Experience in luxury hotels, resorts, large hospitality operations, or central production kitchens preferred.
- Knowledge of food safety standards applicable to hospitality operations.

Skills & Competencies
- Strong knowledge of FSSAI regulations, HACCP, GMP, GHP, and ISO 22000.
- Excellent auditing and inspection skills.
- Solid analytical and problem-solving abilities.
- Effective communication and training skills.
- High attention to detail and documentation accuracy.
- Proficiency in Microsoft Office and digital audit/reporting tools.
- Ability to work independently and collaboratively across departments.

Key Performance Indicators (KPIs)
- 100% compliance with food safety and statutory regulations.
- Successful completion of internal and external audits.
- Reduction in food safety non-conformities.
- Timely completion of hygiene inspections and CAPA.
- Staff food safety training compliance.
- Zero major food safety incidents or regulatory violations.
- Improved hygiene audit scores across all F&B; outlets.

Minimum Qualification:

Bachelor's Degree in Food Technology, Food Science, Microbiology, Hospitality Management, or a related

Minimum Job Experience:

3 - 7 years of experience in food safety, quality assurance, or hygiene management
