: Assistant Restaurant Manager (ARM) – Fieno

Role Overview The Assistant Restaurant Manager (ARM) will be responsible for driving guest experience, service excellence, and floor leadership at Fieno.

This role requires a wine-forward hospitality professional with formal WSET certification , strong service fundamentals, and the ability to elevate dining into a curated, narrative-led Italian experience inspired by Campania .

Key Responsibilities

1. Guest Experience & Floor Leadership

- Lead service on the floor to deliver warm, anticipatory, and personalized dining experiences
- Ensure each table receives story-driven service aligned with Fieno’s philosophy (craft, provenance, nostalgia)
- Handle VIP guests, reservations, and special occasions with finesse
- Proactively manage guest feedback, recovery, and relationship building

2. Wine & Beverage Excellence (Core Requirement)

- Curate and drive wine service rituals (presentation, decanting, pairing storytelling)
- Recommend wine pairings aligned with menu philosophy (Campania-led, Italian regional authenticity)
- Train team on:
- Basic wine knowledge
- Glassware & service standards
- Pairing logic with menu dishes
- Work closely with management on:
- Wine list updates
- Menu pairings
- Seasonal beverage programs

3. Team Management & Training

- Supervise and mentor Guest Service Executives and Captains
- Conduct daily briefings focused on menu storytelling + wine pairing
- Build a team culture of:
- Discipline + warmth
- Attention to detail
- Passion for hospitality
- Support recruitment, onboarding,



and performance management

4. Operations & Service Standards

- Ensure immaculate floor readiness at all times (mise en place, ambiance, cleanliness)
- Maintain SOPs for:
- Service sequence
- Wine service protocols
- POS & billing accuracy
- Coordinate with kitchen for:
- Smooth service flow
- Course pacing
- Monitor inventory (glassware, linens, service tools)

5. Sales & Revenue Focus

- Drive average check growth through intelligent wine upselling
- Optimize covers vs. experience balance (avoid overloading the floor)
- Contribute to improving:
- Repeat guest frequency
- Table spend
- Guest satisfaction scores

Candidate Profile

Must-Have

- WSET Level 2 or 3 (mandatory) or Court Of Masters
- 3–5 years experience in premium casual / fine dining restaurants
- Robust understanding of:
- Italian cuisine & dining culture
- Wine pairing fundamentals
- Excellent communication and guest handling skills

Preferred

- Experience in luxury or boutique hospitality brands
- Exposure to Italian / European dining concepts
- Familiarity with HNI / UHNI clientele handling
- Experience with wine-led service environments
