- Monitor and control all food, beverage and liquor purchases.
- Develop and maintain effective inventory management systems.
- Conduct periodic physical stock verification of stores, kitchens and bars.
- Analyse food cost, beverage cost and gross profit margins.
- Ensure adherence to standard recipes, portion control and yield management.
- Monitor liquor inventory, bottle movement and excise compliance.
- Reconcile purchases, issues, consumption, sales and inventory variances.
- Identify wastage, pilferage and process inefficiencies, and recommend corrective measures.
- Prepare daily, weekly and monthly MIS reports, including cost analyses and variance reports.
- Assist in budgeting, forecasting and menu costing.
- Review vendor pricing and support procurement negotiations.
- Conduct surprise audits and recommend improvements to internal controls.
- Work with the Finance Department to ensure accurate accounting and reporting of F&B; operations.
- Support the implementation and optimisation of ERP, POS and inventory management systems.
