Position: Chef de Partie (CDP) – South Indian Cuisine

Job Summary

We are looking for an experienced Chef de Partie (CDP) – South Indian Cuisine who is passionate about authentic South Indian cooking and can maintain high standards of food quality, hygiene, and consistency. The candidate should be capable of handling the South Indian section independently during breakfast, lunch, and dinner operations.

Key Responsibilities

- Prepare authentic South Indian dishes such as idli, dosa, vada, pongal, upma, sambar, chutneys, rasam, curries, and regional specialties.
- Ensure consistency in taste, quality, and presentation.
- Handle the South Indian kitchen section independently.
- Maintain food safety, hygiene, and sanitation standards.
- Monitor stock levels and raise indent requests for ingredients.
- Minimize food wastage and ensure cost control.




- Supervise and guide Commis chefs and kitchen assistants.
- Coordinate with the Executive Chef/Sous Chef for daily operations.
- Ensure timely preparation and service during buffet, à la carte, and banquet operations.

Requirements

- Experience: 5 years in South Indian cuisine, with at least 2 years as a CDP.
- Solid knowledge of traditional South Indian recipes and cooking techniques.
- Experience in hotels, resorts, or large restaurants preferred.
- Ability to work under pressure in a fast-paced kitchen.
- Good leadership and communication skills.
- Knowledge of food safety and hygiene practices.

Preferred Skills

- Expertise in live dosa counter operations.
- Experience in banquet and buffet production.
- Ability to train junior kitchen staff.
- Good time management and teamwork.
