Monitor and control all food, beverage and liquor purchases.
Develop and maintain effective inventory management systems.
Conduct periodic physical stock verification of stores, kitchens and bars.
Analyse food cost, beverage cost and gross profit margins.
Ensure adherence to standard recipes, portion control and yield management.
Monitor liquor inventory, bottle movement and excise compliance.
Reconcile purchases, issues, consumption, sales and inventory variances.
Identify wastage, pilferage and process inefficiencies, and recommend corrective measures.
Prepare daily, weekly and monthly MIS reports, including cost analyses and variance reports.
Assist in budgeting, forecasting and menu costing.
Review vendor pricing and support procurement negotiations.
Conduct surprise audits and recommend improvements to internal controls.
Work with the Finance Department to ensure accurate accounting and reporting of F&B; operations.
Support the implementation and optimisation of ERP, POS and inventory management systems.
