Position: Cafe Manager (Full time, Permanent)
Location: Nandan Coffee outlet, Mumbai (transferable across outlets)
Reports To: Operations Head
Team: Assistant Manager, Team Leaders, Senior Baristas, Baristas
Work Pattern: On-floor role; rotational/day shifts including weekends, holidays and peak periods
Compensation: Competitive, commensurate with experience; reviewed against performance
About Us
Nandan Coffee (Yaraman Coffee Pvt Ltd) is a growing specialty coffee brand connecting the journey from
estate to roastery to cafe. We are building cafes that run on strong systems, genuine care for people,
and a consistently excellent guest experience — and we're looking for a Cafe Manager who shares that
mindset.
The Role
As Cafe Manager, you are the single accountable owner of your outlet — its guest experience,
profitability, people, standards, and reputation in the local community. Your job is to build a cafe that
runs on documented systems and a well-trained team, not on any one person's presence.
Our one-line test for the role: if you're away for a week, the cafe should still run to standard — because
the systems, records, and team you've built carry it.
Key Responsibilities
- Operations & Standards — Own daily operations end to end — opening, mid-shift, and closing
routines run to checklist with recorded sign-off, plus structured shift handovers and a daily
operations log.
- Food Safety & Compliance — Ensure strict FEFO/FIFO stock rotation, zero expired product, daily
hygiene and temperature checks, and keep FSSAI and all statutory licences current and inspection-
ready.
- People Leadership — Lead and develop a multi-level team — rostering, on-time appraisals,
structured feedback delivered privately,
onboarding, and building a succession bench. We hold a
high bar for respectful, documented, feedback-led people management.
- Inventory & Cost Control — Own par levels, indents, goods receipt, wastage logging, and month-
end stock counts; hit agreed GP%, wastage, and labour-cost targets.
- Guest Experience — Deliver a consistently excellent experience across dine-in, takeaway, and
aggregator channels; resolve complaints through a defined service-recovery process and review
feedback patterns weekly.
- Financial Accountability — Own the outlet P&L — monthly revenue, gross-profit, and labour-cost
targets; daily cash, POS, and reconciliation controls with recorded sign-off.
- Communication & Documentation — Maintain accurate, retrievable records — daily logs,
handovers, incident reports, and people files; run a fixed weekly team huddle with recorded
actions; submit reports on time, every cycle.
- Risk & Escalation — Lead first response to safety, security, or guest incidents using a defined
escalation matrix — calm, procedural, and fully documented.
What We're Looking For
Essential:
- 3+ years managing a cafe, QSR, or casual/semi-fine-dine outlet with direct P&L and team
accountability.
- A demonstrable record of running to documented systems, checklists, and audits — you can show
how you evidenced compliance, not just claim it.
- Working command of POS systems, daily sales and cost reporting, cash reconciliation, and stock and
wastage control.
- Strong people-management skills across a multi-level team, with a respectful, feedback-led (not
fear-led) style.
- Calm and process-driven under pressure — equipment failures, guest disputes, and incidents are
handled procedurally and documented.
Desirable:
- FSSAI / food-safety supervisor certification or equivalent.
- Experience setting up SOPs, training matrices, or audit systems from scratch.
- Fluency in the local language and familiarity with the outlet's neighbourhood.

Pay: ₹30,000.00 - ₹55,000.00 per month
