Who we're looking for - 10–12 years in skilled kitchens, with time spent leading or serving as the second-in-command of a full kitchen - Solid menu design instincts — someone who thinks in seasons, sources hyperlocal, and can build a menu around what the land actually gives us - Command of food operations end-to-end — costing, portioning, waste,
