RESTAURANT MANAGER

Employment Type: On Roll, Full-Time Role Summary

Ciarans is seeking a Restaurant Manager to lead food & beverage service across the resort as it opens in its repositioned form as a premium eco-luxury coastal retreat. This is a pre-opening leadership hire — the Restaurant Manager will define service standards, build and train the F&B; team, and shape the guest dining experience around the property's signature nightly live music and fresh, locally sourced seafood. Key Responsibilities

- Establish service standards, SOPs, and guest experience benchmarks for all F&B; outlets ahead of the October opening
- Recruit, train, and lead the F&B; service team — Hostess, F&B; Captains, F&B; Associates, Bartenders, and Bar Back Helper
- Partner closely with the Executive Chef on menu rollout, service flow, and kitchen-to-floor coordination
- Own the nightly live music dining experience — coordinating ambience, seating flow, and guest engagement
- Manage beverage programme, bar inventory, and supplier relationships alongside the Bartenders
- Handle guest feedback, complaints, and special requests with warmth and discretion
- Monitor F&B; revenue, covers, average spend,



and cost of goods against budget
- Ensure hygiene, safety, and licensing compliance across all service areas
- Coordinate with Front Office and Reservations on in-house guest dining, group bookings, and events
- Maintain consistent presentation, grooming, and service standards across the team Qualifications & Experience
- 5–8 years of F&B; service experience, with at least 2–3 years in a Restaurant Manager or Assistant F&B; Manager role
- Degree or diploma in Hotel Management preferred
- Experience in a resort, boutique hotel, or premium standalone restaurant environment
- Working knowledge of POS systems, inventory control, and F&B; cost management
- Experience building or training a service team from scratch is a strong advantage
- Familiarity with beverage and bar operations Key Attributes
