Commis 1 Tandoor is a skilled operational kitchen role responsible for food preparation, daily mise en place, and cooking tandoor items like kebabs and breads. Key duties include: operating the tandoor oven, maintaining high hygiene standards, and assisting senior chefs.

Key Responsibilities

- Food Production: Prepare and cook tandoori items including tikkas, kebabs, tandoori chicken, and breads like naan and roti.
- Mise en Place: Set up the tandoor station, marinate meats and paneer, chop ingredients, and organize sauces or accompaniments before service hours.
- Equipment Management: Light, heat, and safely maintain the clay tandoor oven at correct cooking temperatures.
- Quality Control: Ensure consistent taste, portion sizes, and presentation for every order.
- Hygiene and Safety: Follow food safety guidelines, keep the tandoor section clean,



and safely store raw and cooked proteins.
- Team Support: Assist the Chef de Partie (CDP) or Demi Chef de Partie (DCDP) and guide junior staff like Commis 2 or 3.

Requirements and Skills

- Experience: 2 to 4 years of hands-on experience working in an Indian or multi-cuisine tandoor kitchen.
- Knowledge: Deep understanding of traditional Indian tandoori marination and cooking techniques.
- Education: A diploma or certification in Hotel Management or Culinary Arts is often preferred.
- Physical Stamina: Ability to work long hours in a hot, fast-paced, and high-pressure kitchen workplace.

Pay: ₹12,591.37 - ₹20,000.00 per month
