Job Summary

The Commi I – South Indian is responsible for preparing authentic South Indian dishes while ensuring consistency in taste, quality, presentation, and food safety. The role supports the smooth operation of the kitchen by maintaining high hygiene standards and assisting senior chefs in daily production.

Key Responsibilities

- Prepare and cook South Indian dishes such as dosa, idli, vada, uttapam, sambar, rasam, chutneys, and regional curries.
- Carry out daily mise en place as per production requirements.
- Ensure food is prepared according to standard recipes and portion sizes.
- Maintain consistency in taste, quality, and presentation.
- Monitor freshness and quality of ingredients.
- Follow FIFO, stock rotation, and proper storage procedures.
- Maintain cleanliness and hygiene of the workstation in accordance with HACCP and food safety standards.
- Minimize food wastage and ensure cost-effective use of ingredients.
- Assist with buffet setups, breakfast service, and live counters when required.
- Report equipment malfunctions and kitchen maintenance issues to the supervisor.




- Support inventory checks and stock requisitions.
- Work closely with the kitchen team to ensure timely service.

Qualifications

- Diploma or Certificate in Hotel Management or Culinary Arts.
- 2–3 years of experience as Commi I or Commi II in South Indian cuisine.
- Strong knowledge of traditional South Indian cooking techniques and ingredients.
- Basic understanding of food safety and hygiene standards (HACCP).
