Food Preparation

- Prepare mise en place for the Chinese kitchen before each shift.
- Prepare soups, appetizers, noodles, fried rice, gravies, sauces, and wok-fried dishes according to standard recipes.
- Ensure consistency in taste, texture, portion size, and presentation.
- Assist in buffet, banquet, and à la carte food production.
- Prepare and maintain Chinese mother sauces such as Schezwan, Manchurian, Hot Garlic, Black Bean, Oyster, and Sweet & Sour sauces.
- Ensure vegetables retain their freshness and crispness during cooking.

Kitchen Operations

- Operate wok stations efficiently during service.
- Coordinate with the Indian, Continental, Bakery, and Banquet kitchens for smooth operations.
- Maintain proper mise en place throughout the service.
- Ensure timely preparation and dispatch of all food orders.

Quality Control

- Follow standardized recipes and cooking procedures.
- Taste and adjust seasoning before service (as authorized).
- Ensure proper cooking temperatures and food quality.
- Check freshness of vegetables, meats, seafood, and sauces before use.

Inventory & Cost Control

- Prepare daily requisitions for vegetables,



sauces, meat, seafood, and dry stores.
- Monitor food wastage and maintain portion control.
- Assist in monthly inventory and stock verification.
- Report shortages, spoilage, or damaged goods to the Chef de Partie.

Daily Duties

- Attend kitchen briefing.
- Check grooming and uniform.
- Prepare daily mise en place.
- Prepare stocks and Chinese sauces.
- Receive and inspect raw materials.
- Cook dishes as per KOTs and banquet orders.
- Maintain cleanliness of the wok station.
- Assist with buffet replenishment.
- Complete kitchen closing checklist.
- Hand over work to the next shift.

Qualifications

- Certificate, Diploma, or Degree in Hotel Management or Culinary Arts.
- Food Safety/HACCP certification is preferred.

Experience

- 5-6 years of experience in an Indo-Chinese or Oriental kitchen.
- Experience in hotels, resorts, or fine dining restaurants is preferred.

Pay: ₹17,000.00 - ₹20,000.00 per month
