Position: Production Manager Makhana Processing Unit
Role summary
- Manage end-to-end production operations of the makhana processing unit (receiving, grading, cleaning, roasting/ popping, flavouring/ coating, packing, and dispatch) to meet quality, safety, cost, and on-time delivery targets.
- Lead production team, maintain production schedules, implement process improvements, and ensure compliance with food safety (FSSAI) and statutory requirements.
Key responsibilities
- Oversee daily production planning and scheduling to meet weekly/ monthly order targets and minimize downtime.
- Supervise and train production staff (operators, supervisors, quality inspectors, packers) and maintain shift rosters.
- Ensure consistent product quality through process controls, in-line inspections, and coordination with QC team.
- Implement and monitor Positive Manufacturing Practices (GMP), sanitation, HACCP/ food safety protocols, and FSSAI requirements.
- Manage raw material receipt and inventory for makhana and ingredients, ensure correct storage and FIFO usage.
- Optimize productivity and yield by analysing process losses (breakage, rejects) and implementing corrective actions.
- Maintain and improve equipment uptime through preventive maintenance schedules and coordination with maintenance team/ vendors.
- Control production costs (labour, utilities, consumables) and suggest cost-saving measures without compromising quality.
- Prepare production reports (daily/ weekly/ monthly output, scrap, downtime, OEE) and escalate issues to senior management.
- Lead continuous improvement initiatives (5S, Kaizen, process standardization) to increase efficiency and reduce waste.
- Ensure workplace safety, investigate incidents, and maintain incident/near-miss logs.
- Coordinate with procurement, quality, stores, and sales for smooth operations and on-time dispatch.
Required qualifications & experience
- Degree/Diploma in Food Technology, Food Processing, Dairy/ Food Engineering, Mechanical Engineering, or related discipline.
- Minimum 5–10 years’ experience in food processing/ manufacturing; 5–8 years in a managerial role preferred. Experience specifically with snack/ nut processing, roasted/ popped products, or makhana processing is an advantage.
- Strong working knowledge of food safety standards (FSSAI, HACCP), GMP, and quality systems.
Skills and personal attributes
- Proven leadership and people-management skills; experience in shift management.
- Good understanding of process flow for makhana: cleaning, grading, roasting/ popping, seasoning/ blending, oil- or dry-flavouring processes, and packing lines.
- Analytical problem-solving: root-cause analysis (5 Why, fishbone), process optimization.
- Knowledge of maintenance practices and ability to coordinate with technicians.
- Computer literate (MS Excel, production reporting tools); ability to work with basic MIS.
- Strong communication and coordination skills; ability to work under pressure.
- Commitment to food safety, hygiene, and worker safety.
Key performance indicators (KPIs)
- Production output vs target (kg/day or tons/month).
- Yield percentage (finished product / raw makhana input).
- Overall Equipment Effectiveness (OEE) and plant uptime.
- Percentage of quality rejects or customer returns.
- On-time dispatch rate.
- Labour productivity (kg per operator-hour).
- Cost per kg produced (materials + utilities + labour).
Staffing & shift guidance
Typical unit size (small-medium): 8–25 staff per shift, including operators, helpers, QC, packing, and supervisor; larger plants scale accordingly.
- Suggested shifts: Single shift for small units (8–10 hours), two-shift rotation for larger volumes.
- Typical reporting: Production Manager reports to Plant/Operations Head or Owner.
