Job Summary

We are looking for a highly motivated Freeze-Drying Food Production Technician / Floor Manager to operate, monitor, and manage industrial freeze-drying (lyophilization) processes for fruits, vegetables,

herbs, ready-to-eat foods, dairy products, and nutritional ingredients.

The successful candidate will ensure smooth production, maintain food safety standards, optimize machine performance, supervise production staff, and deliver high-quality freeze-dried products.

Key Responsibilities

Freeze Dryer Operations

- Operate commercial freeze dryers (Lyophilizers)
- Program drying cycles based on product specifications
- Monitor vacuum pressure, condenser temperature, shelf temperature, and drying parameters
- Ensure complete moisture removal through sublimation

Production Planning

- Prepare production schedules
- Coordinate raw material movement
- Supervise pre-freezing, loading, unloading, and packaging operations
- Minimize production downtime

Batch Preparation

- Inspect incoming raw materials
- Arrange food uniformly on trays
- Maintain correct batch weight and loading patterns
- Ensure traceability of every production batch

Quality Control

- Measure residual moisture levels
- Inspect finished products for texture, color, aroma, and structure
- Coordinate with QC laboratory
- Maintain batch records and production documentation

Food Safety & Compliance

- Follow GMP, HACCP, ISO 22000, FSSAI, FDA, and USDA guidelines
- Maintain hygienic processing areas
- Conduct sanitation before and after every production cycle




- Ensure compliance with food safety regulations

Equipment Maintenance

- Perform routine preventive maintenance
- Identify refrigeration, vacuum pump, compressor, or PLC issues
- Coordinate with maintenance engineers for major repairs
- Maintain equipment logbooks

Team Management

- Supervise production operators
- Train recent employees
- Allocate daily work schedules
- Monitor productivity and discipline

Packaging & Storage

- Ensure products are packed under controlled conditions
- Verify oxygen absorber usage where applicable
- Monitor metal detector performance
- Maintain warehouse storage conditions

Documentation

- Production reports
- Batch manufacturing records
