3. JOB DEFINITION: A chef departie controls a section of the kitchen. They are third in command after anExecutive Chef and then a Kitchen Executive. Typically they manage a small teamof workers, though they sometimes are the sole person working in their sectionof the kitchen.
4. DUTIES AND RESPONSIBILITIES
The main responsibility of a chef de partie is tooversee and aid in the preparation, cooking and presentation of food in arestaurant.
They must delegate duties to chefs working in theirsection of the kitchen.
Additionally, they must monitor to make sure foodquality, presentation and safety standards are being adhered to.
Cooks consistently and enthusiastically on a highlevel as chef de partie as directed by the head chef.
Helps creating and cooking to perfection dishes forthe restaurant by using produce in a sensible and cost effective way.
Cooking and preparing for each service and performsall duties assigned to him/her by the head chef.
Making sure his/her station and its workplace(Kitchen and store rooms)
is spotless clean and hygiene is kept up at alltimes. Maintains personal tidy appearance and works in a highly hygienicmanner.
Keeps control of his/her responsible station andreports orders for food and non food to the head chef.
Controls incoming goods and stores it inperfect conditions.
Actively attends general trainings, team buildingevents and supplier visits to learn about local produce and improve knowledge.
Is guest orientated and able to converse withguests.
Has fun cooking and loves his job! Is a sociablechef who likes to work in a small team and respects and activelyworks with his colleagues in office.
He helps in controlling the DNMEs.
Finally, they are responsible for troubleshootingany issues that arise in their section of the kitchen.
