:
- Assist in the preparation and cooking of food, including breakfast, lunch, dinner, beverages, and special diet preparations as assigned.
- Prepare ingredients through washing, cleaning, cutting, chopping, grinding, soaking, and other required mise en place activities.
- Prepare customized meals strictly as per the dietary instructions prescribed by the Ayurveda Doctor and/or authorized supervisor based on the patient's/guest's health condition.
- Follow approved recipes, ingredients, cooking methods, portion sizes, and dietary instructions without unauthorized changes or substitutions.
- Ensure restricted ingredients such as excess salt, sugar, oil, spices, or other items are not used where specifically prohibited.
- Maintain proper identification and segregation of customized diets to avoid errors or mix-ups.
- Assist in cooking, plating, portioning, and timely dispatch of food during meal services.
- Be flexible to work across different kitchen activities and support other kitchen staff as required.
- Ensure the freshness and quality of all ingredients before use and report any concerns to the Chef/Supervisor.
- Follow FIFO practices and ensure proper storage, labelling, covering, and handling of food and ingredients.
- Maintain high standards of personal hygiene, kitchen cleanliness, food safety, and sanitation at all times.
- Prevent cross-contamination, particularly while preparing customized or therapeutic diets.
- Keep workstations, utensils, equipment, and kitchen areas clean and organized before, during,
and after operations.
- Assist in maintaining required kitchen records, checklists, temperature logs, cleaning records, wastage records, and other documentation as assigned.
- Minimize food wastage through proper preparation, portion control, and careful handling of ingredients.
- Inform the Chef/Supervisor of shortages, equipment issues, food quality concerns, dietary clarifications, or any other operational issues.
- Coordinate with the Chef, kitchen team, service team, and relevant departments to ensure timely and accurate meal service.
- Properly communicate pending preparations, special dietary requirements, and other important information during shift handover.
- Follow all kitchen SOPs, food safety procedures, hygiene standards, NABH requirements, and organizational policies applicable to the department.
- Participate in cleaning, closing, and handover activities at the end of the shift.
- Work rotational shifts, weekends, holidays, and extended hours as required by operational needs.
- Maintain a skilled, disciplined, cooperative, and respectful attitude towards guests/patients, colleagues, and all departments.
- Perform any other kitchen-related duties assigned by the Chef/Supervisor from time to time.
Requirements:
- Diploma in Hotel Management/Cookery
- Minimum 2 to 3 years experience (South Indian/Indian Kitchen)
Pay: ₹15,000.00 - ₹18,000.00 per month
