About the Role
We are looking for a Commis 3 to support the Chocolate & Pastry section of the kitchen. This is an entry-level culinary role suited for someone early in their pastry career, looking to build strong foundational skills in chocolate work, dessert preparation,
and bakery operations under the guidance of senior chefs.
Key Responsibilities
Assist in daily mise-en-place for the pastry and chocolate section (weighing, measuring, prepping ingredients)
Support preparation of chocolates, ganaches, pralines, and confections as per standard recipes
Assist with basic pastry items — doughs, batters, fillings, and garnishes
Maintain temperature and hygiene standards for chocolate tempering and storage
Follow portion control and wastage guidelines to maintain cost efficiency
Keep the section clean and organized in line with FSSAI/food safety standards
Support senior chefs during service and high-volume production periods
Label, date, and store ingredients and finished products correctly (FIFO)
Learn and follow standard recipes and presentation guidelines consistently
Report equipment issues or stock shortages to the shift-in-charge
