JOB DESCRIPTION – PRODUCTION HEAD

Wafer & Chocolate Plant

1. Job Purpose

To lead and manage the overall production operations of the Wafer & Chocolate manufacturing plant, ensuring achievement of production targets, product quality, food safety, operational efficiency, minimum wastage and optimum utilization of manpower, machines and materials.

The Production Head will be responsible for production planning and execution, process control, manpower management, OEE improvement, cost optimization, maintenance coordination, GMP/HACCP compliance and continuous improvement across wafer and chocolate production lines.

2. Key Responsibilities

A. Production Planning & Operations

- Plan, organize and control daily, weekly and monthly production activities as per business and production plans.
- Ensure timely achievement of production targets while maintaining quality and safety standards.
- Monitor overall production of wafer sheets, cream preparation, wafer assembly, cutting, stacking, chocolate preparation, tempering, enrobing and cooling processes.
- Ensure optimum utilization of production lines, equipment, manpower and production resources.
- Monitor production output, line efficiency, machine utilization and downtime.
- Ensure proper start-up, changeover and shutdown of production lines.
- Take immediate corrective actions for production deviations, process issues and operational bottlenecks.
- Drive continuous improvement in production capacity and productivity.

B. Process & Production Control

- Monitor critical process parameters and ensure compliance with approved specifications and SOPs.
- Ensure control of:
- Wafer sheet thickness, weight and moisture
- Cream quantity and application
- Wafer dimensions and stacking
- Chocolate temperature and viscosity
- Tempering parameters
- Enrobing/chocolate coverage
- Cooling tunnel temperature and conveyor speed
- Product weight and dimensions

- Ensure adherence to approved recipes, process specifications and manufacturing standards.




- Identify process deviations and implement effective corrective and preventive actions.

C. Manpower Management

- Lead and manage production supervisors, shift in-charges, operators, helpers and other production personnel.
- Prepare manpower deployment plans according to production requirements.
- Monitor manpower productivity, attendance, discipline and performance.
- Ensure optimum manpower utilization across all production lines.
- Develop and train team members on machine operation, SOPs, GMP, food safety and safety procedures.
- Conduct performance reviews and identify training and development requirements.
- Build a robust, accountable and performance-oriented production team.

D. Machine & Maintenance Coordination

- Coordinate closely with Mechanical, Electrical, Instrumentation and Automation Maintenance teams.
- Ensure timely resolution of machine breakdowns and production interruptions.
- Monitor machine health, recurring breakdowns and equipment performance.
- Analyze major downtime causes and drive corrective actions.
- Participate in preventive and predictive maintenance planning.
- Coordinate with Engineering/Projects for machine modifications, capacity enhancement and process improvements.
- Ensure proper operator-level cleaning, inspection and basic maintenance practices.

E. Material & Inventory Management

- Coordinate with Planning, Stores and Procurement to ensure timely availability of raw and packaging materials.
- Monitor consumption of chocolate, wafer ingredients, cream ingredients and packaging materials.
- Ensure production is carried out within defined material consumption norms.
- Identify abnormal material consumption and implement corrective actions.
- Minimize raw material, packaging and process losses.

F. Quality & Food Safety

- Ensure compliance with GMP, HACCP, food safety, hygiene and internal quality standards.




- Coordinate with QA/QC to ensure consistent product quality.
- Ensure production is carried out as per approved SOPs, recipes and specifications.
- Prevent cross-contamination, foreign-material contamination and other food safety risks.
- Ensure proper segregation and disposition of rejected/non-conforming products.
- Maintain batch traceability and production documentation.
- Support investigations related to customer complaints, quality deviations and product rejections.

G. Wastage, OEE & Cost Control

- Monitor production wastage, yield and conversion cost on a daily basis.
- Identify major sources of losses and implement corrective actions.
- Reduce:
- Wafer breakage
- Chocolate losses
- Cream losses
- Start-up/changeover losses
- Cutting losses
- Packing rejection
- Overweight/underweight products
- Process losses

- Drive improvement in OEE, line efficiency, yield and productivity.
- Develop and implement initiatives for cost reduction and resource optimization.
- Benchmark production performance against defined KPIs.

H. Production KPI & Performance Monitoring

- Establish and monitor key production KPIs such as:
- Production vs. Target
- OEE
- Line Efficiency
- Yield
- Wastage %
- Downtime
- Changeover Time
- Manpower Productivity
- Material Consumption
- Rejection %
- Production Cost

- Review daily production performance and take corrective actions for gaps.
- Prepare and present production MIS and performance reports to Plant Head/Management.

I. Continuous Improvement

- Identify opportunities for productivity improvement and process optimization.
- Implement Lean Manufacturing, 5S, Kaizen and other continuous improvement initiatives.
- Reduce bottlenecks, process losses and unnecessary downtime.
- Improve line balancing, manpower utilization and machine utilization.
- Drive automation and process improvement projects in coordination with Engineering/Projects.

3. Shift & Production Documentation

Ensure proper preparation, review and maintenance of:

- Daily Production Report
- Production Achievement vs. Target
- OEE & Line Efficiency Report
- Machine Downtime Report
- Wastage & Yield Report
- Material Consumption Report
- Manpower Deployment Report
