Position Summary

We are looking for passionate and disciplined Commis 1 and Commis 2 team members to join our Chocolate & Pastry Kitchen.

The role will primarily support chocolate production while also providing hands-on exposure and training in pastry and bakery production. The ideal candidate should have a solid interest in developing a long-term career in pastry and be willing to learn professional pastry techniques, recipes, production methods and finishing standards.

Key Responsibilities1. Chocolate Production
- Assist in the preparation and production of chocolates, pralines, truffles, fillings, ganaches and chocolate decorations.
- Assist with chocolate tempering, moulding, dipping and finishing as per SOPs.
- Maintain consistency in quality, weight, texture, taste and appearance.
- Follow standard recipes and production sheets accurately.
- Handle chocolate and raw materials carefully to minimize wastage.

2. Pastry & Bakery Development




- Assist in daily pastry and bakery mise en place and production.
- Prepare and assist with cakes, creams, mousses, fillings, cookies, brownies, tarts and other pastry components.
- Learn basic techniques such as weighing, mixing, whipping, baking, piping, assembling and decorating.
- Support preparation of breads, viennoiserie and other bakery products as assigned.
- Gradually take responsibility for selected pastry products based on skill level.
- Maintain proper portioning, presentation and finishing standards.

3. Kitchen Operations
- Complete daily mise en place according to the production plan.
- Operate mixers, ovens, scales, refrigerators and other kitchen equipment safely.
- Follow recipes, SOPs, production schedules and instructions from senior chefs.
- Ensure correct storage, labelling, dating and FIFO of ingredients and finished products.
