Job Purpose

To plan and execute the daily cooking and packing of breakfast and lunch meals at the centralized kitchen, ensuring meals are prepared as per the approved menu, in the required quantity, and dispatched on time to allotted schools.

Key Responsibilities
- Execute daily production as per the approved menu cycle and quantity indent (number of students/schools to be served).
- Supervise cleaning, cutting, cooking, and packing activities on the shop floor, ensuring adherence to standard recipes and quantities.
- Operate and coordinate use of kitchen equipment (steam cookers, boilers, conveyor systems, mixers) safely and efficiently along with technicians.
- Ensure raw material issued from stores is used as per standard recipe norms, minimizing wastage.
- Coordinate with the Quality Executive to ensure in-process hygiene and food safety checks are followed.
- Ensure timely packing and handover of meals to the distribution team as per the dispatch schedule.
- Maintain daily production records — quantity cooked, quantity dispatched, wastage, and shortages.




- Ensure kitchen staff follow safety protocols while handling hot equipment, LPG/steam lines, and cutting tools.
- Report equipment breakdowns or production delays immediately to the Sr. Executive – Production.

Educational Qualification

Diploma/Degree in Catering Technology, Hotel Management, Food Technology, or Graduate in any discipline; candidates with a background in large-scale/institutional cooking are preferred.

Experience

1–3 years in bulk/institutional cooking, central kitchen, catering, or mid-day meal production. Candidates with hands-on cooking experience in community kitchens will be preferred.
