Job Purpose

To ensure that every meal (breakfast and lunch) prepared and dispatched from the centralized kitchen meets HKMCF's food safety, hygiene, and quality standards, and complies with FSSAI and Government of Telangana school meal norms, from raw material intake through to final dispatch.

Key Responsibilities
- Inspect and approve incoming raw materials (grains, vegetables, oil, milk, spices, packaging) against defined quality and freshness specifications before acceptance into stores.
- Conduct in-process quality checks at each stage of cooking — cleaning, cutting, cooking temperature, holding time — and record observations on standard checklists.
- Monitor personal hygiene of kitchen staff (uniforms, hairnets, hand-washing, health checks) and general plant hygiene (equipment sanitation, pest control, waste disposal).
- Draw and preserve daily food samples for each menu item as per protocol, for traceability in case of any complaint.
- Check portion sizes, packaging integrity, labelling,



and temperature of food at the point of dispatch to ensure it is protected and fit for consumption on arrival at schools.
- Maintain quality records, checklists, and MIS reports (raw material QC, in-process QC, dispatch QC, non-conformance reports, corrective actions).
- Support internal and external/FSSAI audits; ensure kitchen readiness for inspections by government officials.
- Escalate any quality deviation, food safety risk, or non-conformance immediately to the Unit Head and coordinate corrective action.
- Train kitchen staff periodically on food safety, hygiene practices, and quality protocols.

Educational Qualification

B.Sc. (Chemistry/Food Science / Food Technology / Home Science / Nutrition) or equivalent; a certification in FSSAI/HACCP/Food Safety is preferred.

Experience

1–3 years of experience in food quality control, preferably in a central kitchen, catering, food processing, or mid-day meal environment. Freshers with relevant qualifications may also be consider
