EXECUTIVE CHEF

Role Summary

Ciarens is seeking an Executive Chef to lead the culinary vision of the resort as it repositions itself as a premium eco-luxury coastal retreat. The Executive Chef will own the kitchen from menu design through daily execution — building on the property's 26-year heritage of nightly live music, a fresh fish display, and warm, authentic hospitality, while elevating standards to match the resort's upgraded interiors and guest expectations. This is a founding leadership hire: the Executive Chef will build and train the entire kitchen brigade (CDP, Commis 1/2/3) ahead of the October opening.

Key Responsibilities
- Design and execute menus across all dining outlets that celebrate fresh, local Goan seafood and coastal ingredients while offering an elevated, eco-luxury dining experience




- Curate the fresh fish display concept — a signature guest touchpoint — sourcing daily from local fishermen and markets
- Build kitchen SOPs, hygiene, and food safety standards from the ground up ahead of opening
- Recruit, hire, and train the full kitchen team — CDP, Commis 1, Commis 2, Commis 3 — before October launch
- Manage food cost, portion control, wastage, and vendor/supplier relationships within budget
- Partner with the Restaurant Manager to align kitchen output with service flow and guest experience standards
- Plan seasonal and special-occasion menus, including live music nights and in-room dining
- Uphold sustainability principles consistent with Ciarens' eco-luxury positioning — minimal waste, local sourcing, seasonal ingredients
- Maintain kitchen equipment, inventory, and store management systems
- Ensure consistent quality and presentation standards across all outlets

- Minimum 8–10 years of culinary experience, with at least 3 years as Execut
