The Head Baker will be responsible for overseeing the complete bakery operations, ensuring consistent product quality, managing production planning, and leading the baking team. The role requires strong technical expertise in baking, hands-on leadership, and the ability to manage day-to-day bakery operations efficiently.

Key Responsibilities

* Lead end-to-end bakery production, from dough preparation and fermentation to baking, finishing, and dispatch.

* Ensure precision, consistency, and efficiency across all stages of production.

* Maintain high standards of product quality, focusing on texture, structure, flavour, and presentation.

* Plan and manage daily production schedules in line with business demand and operational requirements.

* Ensure timely production while maintaining product quality and craftsmanship.

* Implement and enforce hygiene, food safety, and operational SOPs across the bakery.

* Lead, train, mentor, and develop the baking team, fostering discipline, ownership, and attention to detail.





* Manage inventory planning and raw material consumption while minimizing wastage and operational inefficiencies.

* Ensure all bakery equipment is properly maintained, calibrated, and used efficiently.

* Monitor daily bakery operations, identify gaps, and implement continuous improvements in processes, quality, and team performance.

* Maintain a clean, organized, and safe working setting at all times.

Candidate Profile

* 5-10 years of experience in artisanal, specialty, or high-quality bakery environments.

* Previous experience in a supervisory or leadership role is preferred.

* Strong technical knowledge and hands-on experience in breads and viennoiserie.

* Excellent understanding of dough preparation, fermentation, baking techniques, and finishing.

* Strong attention to detail with a focus on consistency and quality.

* Ability to manage operations in a structured, high-volume production environment.
