We are hiring for Head of Procurement for our Restaurant - Red Rhino Brewing Co.
Note - Experience in Restaurant/Hotel Industry is mandatory

Job Purpose

The Head of Procurement will be responsible for managing and strategically developing the procurement function for the restaurant business. The role will ensure the timely availability of quality food, beverages, ingredients, packaging, equipment, and operating supplies at the best possible cost while maintaining quality, food safety, and supplier standards.

Key Responsibilities

1. Strategic Procurement

- Develop and implement procurement strategies aligned with restaurant operations and business objectives.
- Manage procurement for food ingredients, beverages, packaging materials, kitchen equipment, crockery, cutlery, housekeeping supplies, uniforms, and other restaurant requirements.
- Develop sourcing strategies to achieve optimum quality, availability, and cost.
- Identify opportunities for centralised procurement and bulk purchasing across outlets.

2. Vendor & Supplier Management

- Identify, evaluate, onboard, and manage suppliers and vendors.
- Maintain a strong and reliable supplier network for fresh, frozen, dry, and non-food items.
- Negotiate pricing, credit terms, minimum order quantities, delivery schedules, and contracts.
- Conduct regular supplier performance reviews based on quality, price, delivery, service, and compliance.
- Develop alternate suppliers for critical and high-value products to minimise supply disruption.

3. Food Cost & Cost Control

- Work closely with the Finance, Operations, Culinary, and Store teams to control food and procurement costs.
- Monitor commodity and market price fluctuations.




- Negotiate better rates and identify cost-saving opportunities without compromising product quality.
- Analyse purchase prices and identify price variances.
- Support food cost optimisation through standardisation and approved vendor/product specifications.
- Ensure procurement remains within approved budgets.

4. Restaurant Operations Support

- Ensure uninterrupted supply of ingredients and operational materials to all restaurant outlets.
- Coordinate with outlet teams and central kitchens to understand upcoming requirements.
- Plan procurement according to sales forecasts, menus, promotions, events, and seasonal demand.
- Ensure timely delivery of fresh and perishable products.
- Coordinate with the Stores team to maintain appropriate inventory levels and minimise wastage, expiry, and overstocking.

5. Quality & Food Safety

- Ensure all food suppliers meet required quality, hygiene, food safety, and regulatory standards.
- Work with the Culinary and Quality teams to establish product specifications.
- Conduct supplier audits and quality evaluations where required.
- Ensure proper documentation and traceability for food products.
- Take corrective action with suppliers for quality complaints, shortages, or rejected materials.

6. Procurement Process & Compliance

- Establish and maintain proper procurement procedures, approval processes, and documentation.




- Ensure purchases are made through approved suppliers and authorised purchase orders.
- Monitor quotations, purchase orders, invoices, GRNs, and supplier agreements.
- Ensure procurement practices comply with company policies and audit requirements.
- Maintain accurate vendor and pricing records in the ERP/procurement system.

7. Team Management

- Lead, guide, and develop the procurement team.
- Set clear targets and KPIs for procurement personnel.
- Monitor team performance and ensure timely completion of purchasing activities.
- Build strong coordination between Procurement, Operations, Finance, Culinary, Stores, and Accounts teams.

8. Reporting & Analysis

- Prepare and present regular procurement reports to management.
- Monitor food and non-food procurement spend.
- Prepare price comparison and savings reports.
- Track supplier performance and purchase price variances.
- Provide management with market intelligence and recommendations on major commodity price movements.
