1. JOB SUMMARY The Bakery Chef / Baker will be responsible for the preparation, production, presentation, and quality of all bakery products served at Grey Soul Coffee. The role requires strong knowledge of baking techniques, consistency in product quality, proper food handling, cleanliness, and the ability to work efficiently in a fast-paced café workplace.
The Bakery Chef is expected to follow Grey Soul Coffee's recipes, SOPs, food safety standards, production schedules, and instructions from the Head Chef / Management.
2. KEY RESPONSIBILITIES
A. Bakery Production
- Prepare and bake breads, pastries, cakes, cookies, muffins, croissants, and other bakery products as per the approved menu.
- Follow standard recipes, measurements, preparation methods, and presentation standards.
- Ensure consistency in taste, texture, appearance, size, and portioning.
- Prepare doughs, batters, fillings, creams, frostings, and other bakery components.
- Monitor proofing, fermentation, baking temperatures, and baking times.
- Ensure products are prepared according to daily production requirements.
- Maintain proper production schedules to ensure timely availability of products.
B. Quality Control
- Check the quality and freshness of all ingredients before use.
- Ensure all finished products meet Grey Soul Coffee's quality and presentation standards.
- Identify and report any quality issues immediately to the Head Chef / Kitchen Manager.
- Minimize wastage, overproduction, and product rejection.
- Maintain consistency across every batch.
C. Inventory & Ingredients
- Check and monitor daily bakery ingredient requirements.
- Inform the Head Chef / Kitchen Manager about low-stock or required ingredients.
- Ensure proper storage and labeling of raw materials and finished products.
- Follow FIFO (First In, First Out) principles.
- Avoid unnecessary wastage of ingredients.
- Maintain proper portion control.
D. Hygiene & Food Safety
- Maintain high standards of personal hygiene and food safety.
- Keep bakery workstations, equipment, utensils, refrigerators, and storage areas clean and sanitized.
- Follow all company hygiene, sanitation, and food safety SOPs.
- Ensure proper handling and storage of dairy, eggs, flour, chocolate, cream,
and other perishable ingredients.
- Follow temperature-control and food-storage requirements.
- Immediately report any hygiene, safety, or equipment-related concern.
E. Kitchen Operations
- Coordinate with the Head Chef, Commis Chefs, Kitchen Team, and Service Team.
- Ensure bakery production is completed within the required timelines.
- Support the kitchen team during busy operational periods when required.
- Maintain discipline and professional conduct within the kitchen.
- Follow opening, closing, cleaning, and production checklists.
- Follow all instructions issued by the Head Chef and Management.
F. Product Development
- Assist in developing new bakery products and seasonal offerings.
- Suggest improvements to existing recipes and products.
- Conduct trials under the direction of the Head Chef / Management.
- Maintain proper recipe records for approved products.
- Support menu development while maintaining cost and quality standards.
3. DAILY RESPONSIBILITIES
- Review the daily bakery production plan.
- Check availability and quality of ingredients.
- Complete required mise en place.
- Prepare and bake products according to production requirements.
- Maintain product consistency and presentation.
- Label and store finished products correctly.
- Record wastage where required.
- Clean and organize the bakery workstation.
- Complete the assigned closing / cleaning checklist.
- Report shortages, equipment issues, wastage, or quality concerns to the reporting manager.
4. REQUIRED SKILLS & COMPETENCIES
- Good knowledge of baking techniques and bakery production.
- Knowledge of dough preparation, proofing, baking, and finishing.
- Understanding of measurements and recipe accuracy.
- Good understanding of food hygiene and safety.
- Ability to work under pressure during peak hours.
- Good time-management and organizational skills.
- Attention to detail.
- Ability to maintain consistency in production.
- Ability to work effectively as part of a kitchen team.
- Willingness to learn and follow company SOPs.
- Good communication and workplace discipline.
5. QUALIFICATION & EXPERIENCE
Education:
- Diploma / Certificate in Bakery, Pastry, Culinary Arts, or a related field is preferred.
Experience:
- 1–3 years of relevant bakery / pastry experience preferred.
- Experience in a café, bakery, restaurant, or specialty food establishment will be an advantage.
- Freshers with relevant bakery training may also be considered based on skills.
6. WORKING CONDITIONS
- Full-time role in a professional café / kitchen setting.
- 6 working days per week.
- Shift-based working as per business requirements.
- Employee must report to work on time and be ready to begin duties at the scheduled shift time.
- The role requires prolonged standing and physical movement during working hours.
- The employee may be required to work during weekends, public holidays, or peak business periods as per the roster.
7. PERFORMANCE EXPECTATIONS Performance will be evaluated based on:
- Quality and consistency of bakery products.
- Timely completion of production.
- Hygiene and food safety compliance.
- Recipe and portion control.
- Reduction of wastage.
- Attendance and punctuality.
- Teamwork and communication.
- Compliance with company SOPs and management instructions.
- Ability to maintain kitchen discipline and cleanliness.
- Customer and management feedback on product quality.
8. REPORTING & ACCOUNTABILITY The Bakery Chef / Baker will report directly to the Head Chef / Kitchen Manager and will be accountable for the quality, quantity, hygiene, timely production, and proper handling of bakery products assigned to them. The employee is expected to follow all Grey Soul Coffee policies, SOPs, food safety standards, operational procedures, and reasonable instructions issued by Management.
9. CONFIDENTIALITY & COMPANY STANDARDS The employee shall maintain confidentiality regarding company recipes, production methods, costing, supplier information, internal processes, and other confidential business information.
The employee is expected to maintain the professional standards and values of Grey Soul Coffee at all times.
