Position Summary
We are seeking an innovative, passionate, and experienced Sous Chef specializing in Pan Asian Cuisine to lead our kitchen operations. The ideal candidate will possess a profound understanding of Asian flavors, modern plating techniques, and kitchen management. As the Sous Chef, you will be the creative force behind our menu, responsible for maintaining impeccable quality, managing a high-performing culinary team, and ensuring that Kiroku sets a new benchmark for Pan Asian cuisine in Ahmedabad.
Key Responsibilities
1. Culinary Leadership & Menu Development
Design, conceptualize, and execute a highly curated, premium Pan Asian menu (including Japanese, Thai, Chinese,



and Asian-fusion dishes).
Develop vegetarian-forward Pan Asian dishes to strongly cater to the local Ahmedabad palate without compromising authentic flavors.
Continuously research culinary trends and seasonal ingredients to introduce creative specials and tasting menus.
Standardize all recipes, portion sizes, and plating specifications to ensure absolute consistency.
2. Kitchen Operations & Team Management
Hire, train, and mentor the kitchen staff (Sous Chefs, Chef de Parties, Commis, and Kitchen Helpers).
Oversee daily kitchen operations, ensuring seamless coordination during high-volume service hours.
Establish a culture of discipline, creativity, and mutual respect within the back-of-house (BOH) team.
Create staff schedules, assign duties, and evaluate team performance.
3. Quality Control & Hygiene
Enforce rigorous food safety, sanitation, and hygiene standards in compliance with FSSAI regu
