F&B; Controller

Responsibilities:
- The F&B; Controller is responsible for monitoring and controlling the financial aspects of the Food & Beverage operations.
- The role focuses on F&B; revenue, cost control, inventory, purchasing, billing, and daily financial reconciliation to ensure profitability and adherence to company standards.

Key Responsibilities
- Monitor daily Food & Beverage sales and revenue across all outlets.
- Verify POS sales, discounts, voids, complimentary items, and promotional offers.
- Conduct daily reconciliation of F&B; sales with cash, card, online payments, and other payment modes.
- Monitor Food Cost and Beverage Cost and identify variances.
- Review and verify F&B; purchase invoices, receiving records, and supporting documents.
- Monitor food and beverage inventory levels and conduct regular physical stock counts.
- Investigate and report discrepancies between physical stock and system records.
- Maintain proper records of opening stock, purchases, consumption, transfers, wastage, and closing stock.
- Monitor wastage, spoilage, breakage,



and complimentary consumption.
- Coordinate with the Purchase, Stores, Kitchen, and F&B; teams regarding stock and cost-related issues.
- Check recipes, portion sizes, and standard food costs where applicable.
- Prepare daily, weekly, and monthly F&B; cost and revenue reports.
- Analyze F&B; performance and highlight unusual variances to management.
- Assist in menu engineering and profitability analysis.
- Ensure proper controls are followed for food and beverage requisitions and inter-outlet transfers.
- Conduct surprise stock checks and audits as required.
- Assist in month-end stock valuation and closing procedures.
- Maintain proper documentation for internal and external audits.
- Ensure compliance with hotel policies, financial controls, and standard operating procedures.
- Provide timely reports and recommendations to the Financial Controller and F&B; Management.
