RESTAURANT ADMIN MANAGER

Department: Restaurant Operations

JOB PURPOSE

To ensure accurate, disciplined, and productive restaurant administration by controlling cash, following up on maintenance, monitoring BOH & FOH operations, identifying operational trends, and keeping management updated.

KEY RESPONSIBILITIES

1. CASH HANDLING
- Verify opening float and reconcile POS sales with cash/card settlements.
- Conduct dual-control cash counts and investigate discrepancies.
- Secure cash and maintain deposit records.
- Review discounts, voids, complimentary transactions, and petty cash.
- Ensure bank deposits are reconciled with register summaries.

2. MAINTENANCE & FACILITIES
- Conduct regular checks of kitchen equipment and restaurant facilities.
- Log and follow up all maintenance issues until closure.
- Monitor refrigeration/freezer temperatures and fire-safety systems.
- Check AC, lighting, plumbing, restrooms, and general facility condition.
- Escalate recurring issues for permanent resolution.

3. INSIGHTS & OBSERVATION
- Observe guest experience, staff performance,



service flow, and peak-hour operations.
- Review sales mix, covers, complaints, delays, and wastage.
- Monitor guest feedback and online review trends.
- Identify recurring issues and communicate actionable observations.

4. BOH & FOH MONITORING
- Ensure BOH hygiene, FIFO, labeling, PPE, food preparation, portioning, and wastage controls.
- Check FOH grooming, cleanliness, guest greeting, seating, billing, reservations, and waitlists.
- Monitor table turnaround and order-to-serve time.
- Ensure service and safety standards are consistently followed.

5. MANAGEMENT REPORTING
- Submit daily operations updates covering sales, cash, incidents, and staffing.
- Immediately escalate critical safety, cash, and guest issues.
- Provide maintenance updates and weekly operational insights.
- Highlight staffing gaps and training requirements.
- Submit monthly performance/portfolio reviews.
