Job Summary
We are looking for a *Food Application Manager – Flavours* to lead the application and technical development of flavour solutions across food and beverage categories.
The candidate will be responsible for understanding customer requirements, selecting and applying suitable flavour systems, conducting application trials, optimizing flavour performance, troubleshooting technical issues, and supporting the commercial team in customer projects.
The role requires strong hands-on experience in flavour application, sensory evaluation, food formulation, and customer-facing technical support.
Key Responsibilities
1. Flavour Application & Product Development
Develop and optimize flavour applications for food and beverage products.
Select appropriate flavour systems based on product matrix, processing conditions, dosage, and target sensory profile.
Conduct laboratory, pilot, and plant-scale application trials.
Optimize flavour dosage for *sensory performance and cost efficiency*.
Develop prototypes and customer samples based on briefs.
Evaluate flavour stability during processing and storage.
Work on applications including:
Bakery and confectionery
Dairy and dairy alternatives
Beverages
Snacks and savoury products
Sauces and dressings
Nutrition products
Ready-to-eat/ready-to-cook products
2. Customer Application Support
Understand customer product briefs and translate them into flavour solutions.
Conduct technical discussions with customers and provide application recommendations.
Visit customer sites for trials, troubleshooting, and product development.
Support the sales team in technical presentations and customer meetings.
Prepare samples, trial reports, technical recommendations, and application notes.
Follow up on customer trials and drive projects toward commercialization.
3. Sensory Evaluation
Conduct sensory evaluation of flavours and finished products.
Develop and maintain sensory benchmarks for key flavour profiles.
Compare competitive products and conduct flavour benchmarking.
Identify off-notes and flavour defects and recommend corrective actions.
Evaluate flavour performance under different processing and storage conditions.
4. Flavour Troubleshooting
Investigate flavour-related issues such as:
Flavour loss during processing
Oxidation
Heat degradation
Poor flavour release
Off-notes
Interaction with other ingredients
Flavour instability during shelf life
Recommend suitable flavour modifications, dosage changes, masking systems, or formulation changes.
5. Cost Optimization
Optimize flavour dosage based on target sensory performance and product COGS.
Develop cost-effective flavour solutions without compromising sensory quality.
Evaluate alternative flavour systems and suppliers.
Support customers in cost-reduction and reformulation projects.
6. New Product & Market Development
Identify new flavour application opportunities and emerging market trends.
Develop application concepts for new flavour launches.
Work with the flavour creation team to translate market requirements into flavour briefs.
Benchmark competitor products and identify opportunities for differentiation.
Support development of natural, nature-identical, clean-label, sugar-reduction, salt-reduction, and masking solutions, where relevant.
7. Cross-Functional Collaboration
Work closely with:

R&D;
Sales
Marketing
Quality
Regulatory
Production
Procurement
Provide application feedback to flavourists for flavour modification and improvement.
Maintain clear documentation of formulations, trials, sensory results, and customer feedback.
Qualifications
Bachelor's or Master's degree in Food Technology, Food Science, Chemistry,
or related field.
5–10 years of experience in *flavour applications, food R&D;, or food ingredient applications.
Strong hands-on experience in food formulation and flavour application.
Experience conducting customer and plant trials.
Good understanding of flavour chemistry and food matrices.
Robust sensory evaluation skills.
Preferred Experience
Candidates with experience in flavour houses, food ingredient companies, or food manufacturers will be preferred.

Ideal Candidate Profile
The ideal candidate will be a hands-on flavour application qualified who understands both flavour technology and food formulation.
They should be comfortable working in the application lab, sensory room, customer plant, and commercial environment, and should be able to translate a customer requirement such as “creamy vanilla,” “natural mango,” “long-lasting strawberry,” or “better chicken flavour” into a technically viable flavour solution.
Strong customer-facing skills, practical trial experience, sensory expertise, and commercial thinking are essential for this role.
Pay: ₹30,000.00 - ₹50,000.00 per month
