Niraamaya is seeking a Commis I – South Indian Cuisine with a strong foundation in traditional South Indian cooking and skilled kitchen operations. The role involves supporting the culinary team in preparing authentic, flavourful, and well-presented South Indian dishes while maintaining the standards of a luxury wellness resort.

Key Responsibilities
- Prepare South Indian dishes including breakfast, main courses, accompaniments, and specialty preparations as per standard recipes.
- Execute daily mise en place and ensure timely preparation for service.
- Maintain consistency in taste, quality, portioning, and presentation.
- Handle fresh ingredients, spices, vegetables, and traditional cooking techniques appropriately.
- Support the preparation of healthy and wellness-oriented South Indian cuisine using quality ingredients.
- Maintain high standards of food hygiene, sanitation, and kitchen safety.
- Ensure proper storage, labelling, and FIFO practices for all food items.
- Minimize food wastage through effective preparation and portion control.




- Maintain cleanliness and organization of the assigned workstation.
- Work closely with the Chef de Partie and culinary team to ensure smooth kitchen operations.
- Follow all recipes, SOPs, and quality standards of the resort.

Candidate Profile
- Diploma/Certificate in Culinary Arts or Food Production preferred.
- 1–3 years of experience in South Indian cuisine, preferably in a reputed hotel, resort, or professional kitchen.
- Strong knowledge of traditional South Indian ingredients, flavours, and cooking techniques.
- Understanding of food safety and hygiene standards.
- Passion for authentic cuisine with an appreciation for healthy and wellness-focused cooking.
- Good teamwork, discipline, attention to detail, and willingness to learn.
- Experience in a luxury or wellness resort will be an advantage.
