, through the Ingredients, Biomaterials & Plasma Processing Laboratory , is inviting applications for a Graduate Research Assistant Ph.D./M.S. position . The selected candidate will join a multidisciplinary research team developing innovative processing technologies to improve rice quality, functionality, and human health .

The research involves collaboration with researchers and industry partners across food science and related fields.

? What You’ll Work On

Rice Chemistry & Grain Quality

Conduct research focused on rice chemistry, grain quality, and functional properties to better understand and improve rice-based food systems.

Rice Processing

Investigate rice processing technologies including milling, drying, and parboiling and their impact on product quality.

Food Processing & Optimization

Work on food processing and process optimization to develop improved processing technologies and enhance food quality.

Protein & Rice Digestion

Study protein composition and rice digestion to understand nutritional and functional characteristics.

Starch Functionality & Digestibility

Investigate starch functionality and digestibility and their relationship to food quality and human health.

Glycemic Index Research

Explore strategies for reducing the glycemic index (GI) of rice and improving its nutritional characteristics.

Statistical Analysis





Apply statistical analysis and experimental design to research data and support evidence-based conclusions.

? Ideal Candidates

You hold a B.S. or M.S. degree in Agricultural Engineering, Food Engineering, or a closely related field .

The GRE is required , with a minimum Analytical Writing score of 4 .

You Have a Strong Interest In

- Food processing
- Cereal grains
- Human health
- Rice science and technology
- Food and nutritional research

You possess excellent written and verbal communication skills . Previous laboratory or research experience is preferred but not required .
