Niraamaya is seeking a Commis I – South Indian Cuisine with a strong foundation in traditional South Indian cooking and skilled kitchen operations. The role involves supporting the culinary team in preparing authentic, flavourful, and well-presented South Indian dishes while maintaining the standards of a luxury wellness resort.

Key Responsibilities
Prepare South Indian dishes including breakfast, main courses, accompaniments, and specialty preparations as per standard recipes.
Execute daily mise en place and ensure timely preparation for service.
Maintain consistency in taste, quality, portioning, and presentation.
Handle fresh ingredients, spices, vegetables, and traditional cooking techniques appropriately.
Support the preparation of healthy and wellness-oriented South Indian cuisine using quality ingredients.
Maintain high standards of food hygiene, sanitation, and kitchen safety.
Ensure proper storage, labelling, and FIFO practices for all food items.
Minimize food wastage through effective preparation and portion control.




Maintain cleanliness and organization of the assigned workstation.
Work closely with the Chef de Partie and culinary team to ensure smooth kitchen operations.
Follow all recipes, SOPs, and quality standards of the resort.

Candidate Profile
Diploma/Certificate in Culinary Arts or Food Production preferred.
1–3 years of experience in South Indian cuisine, preferably in a reputed hotel, resort, or professional kitchen.
Strong knowledge of traditional South Indian ingredients, flavours, and cooking techniques.
Understanding of food safety and hygiene standards.
Passion for authentic cuisine with an appreciation for healthy and wellness-focused cooking.
Good teamwork, discipline, attention to detail, and willingness to learn.
Experience in a luxury or wellness resort will be an advantage.
