Job Summary
Indian DCDP – Duties & Responsibilities
Designation: Indian DCDP (Chef de Partie – Indian Cuisine)
Department: F&B; Production / Kitchen
1. Food Preparation
- Prepare authentic Indian dishes according to approved recipes and hotel standards.
- Handle preparation of gravies, curries, vegetables, breads, rice, dal, kebabs, and other Indian specialties.
- Ensure proper mise en place is completed before service.
- Maintain consistency in taste, presentation, portion size, and quality.
2. Kitchen Operations
- Take responsibility for the assigned Indian kitchen section during the shift.
- Ensure smooth and timely food production during breakfast, lunch, dinner, and events.
- Coordinate with the Sous Chef and Chef de Partie regarding daily production requirements.
- Ensure all food is prepared according to the day's menu and expected covers.
3. Quality Control
- Check the quality, freshness, and quantity of ingredients before use.
- Maintain proper taste, texture, temperature, and presentation of dishes.
- Ensure food is served at the correct temperature and according to hotel standards.
- Report any quality issues to the Sous Chef or Executive Chef.
4. Hygiene & Food Safety
- Maintain high standards of personal hygiene and kitchen cleanliness.
- Follow HACCP, food safety, and hotel hygiene procedures.
- Ensure proper storage, labeling, and date rotation of food items.
- Prevent cross-contamination and maintain proper temperature control.
- Keep the workstation clean and sanitized throughout the shift.
5. Team Coordination
- Guide and supervise Commis Chefs and kitchen helpers assigned to the section.
- Delegate preparation tasks and ensure they are completed correctly.
- Coordinate with other kitchen sections for smooth service.
- Support junior team members in learning Indian cooking techniques and hotel standards.
6. Stock & Cost Control
- Check daily stock and mise en place requirements for the Indian section.
- Inform the Sous Chef about shortages, wastage, or additional requirements.
- Minimize food wastage through proper planning and portion control.
- Follow FIFO principles for food storage and usage.
7. Buffet & À La Carte
- Prepare items for buffet, à la carte, banquets, and special events as assigned.
- Ensure buffet dishes are replenished on time.
- Maintain proper presentation and garnishing of Indian dishes.
- Assist in developing or executing daily specials under the Chef's direction.
8. Equipment & Safety
- Operate kitchen equipment safely and correctly.
- Maintain cleanliness and proper condition of knives, utensils, burners, tandoor, and other equipment.
- Report damaged or malfunctioning equipment immediately.
- Follow fire and workplace safety procedures.
9. Shift & Closing Duties
- Complete proper handover to the next shift.
- Ensure all prepared food is properly stored, covered, labeled, and dated.
- Clean and organize the assigned section after service.
- Ensure refrigerators, workstations, and equipment are left in proper condition.
10. Skilled Responsibilities
- Follow recipes, SOPs, and instructions from the Executive Chef/Sous Chef.
- Maintain discipline, punctuality, and professional grooming.
- Work efficiently under pressure during busy service periods.
- Assist other kitchen sections whenever required.
- Perform any other duties assigned by the Executive Chef or Kitchen Management.
