Internal Auditor – Manufacturing and Shop

Job Summary

The Internal Auditor is responsible for reviewing the financial, inventory, production, sales, and operational activities of the bakery and its retail shops. The role ensures that company policies are followed, stock and cash are properly controlled, food-safety requirements are observed, and losses caused by waste, theft, errors, or fraud are minimized.

Key Responsibilities

- Conduct regular and surprise audits of bakery shops, production units, warehouses, and cash counters.
- Verify daily sales, cash collections, card payments, online orders, discounts, refunds, and deposits.
- Reconcile point-of-sale reports with cash, bank deposits, and accounting records.
- Perform physical stock counts of ingredients, packaging materials, finished products, and shop supplies.




- Review the movement of raw materials from the warehouse to production and retail shops.
- Compare actual ingredient usage with approved recipes and production quantities.
- Check production records, finished-product transfers, returns, damages, expired items, and wastage.
- Investigate unusual stock shortages, excessive wastage, unauthorized discounts, and cash differences.
- Verify purchasing documents, supplier invoices, goods-received notes, and payment approvals.
- Review controls relating to complimentary items, staff meals, product samples, and promotional offers.
- Ensure each shop follows approved pricing, billing, cash-handling, and inventory procedures.
- Check employee attendance, overtime, payroll information, and staff advances when required.
- Review compliance with hygiene, food-safety, storage, temperature-control, and expiry-date procedures.
- Identify operational and financial risks and recommend practical improvements.
- Prepare clear audit reports describing findings, risks, and corrective actions.
- Discuss audit findings with shop managers, production supervisors, finance staff, and senior management.
- Follow up to confirm that agreed corrective actions have been completed.
- Support investigations involving suspected theft, fraud, or misuse of company assets.
- Maintain confidentiality, independence, and skilled integrity.

Qualifications

- Bachelor’s degree in Accounting, Finance, Commerce, Business Administration, or a related field.
- Professional qualification such as CIA, CA, CPA, ACCA, or CISA is an advantage.
- Previous experience in internal audit,



retail operations, food production, hospitality, restaurants, or the bakery industry is preferred.
- Knowledge of inventory management, cash controls, purchasing, costing, and point-of-sale systems.
- Good knowledge of Microsoft Excel and accounting or inventory software.

- Understanding of bakery production, recipe costing, yield, and wastage controls.
- Strong analytical and problem-solving abilities.
- Excellent attention to detail.
- Clear report-writing and communication skills.

- Ability to work independently and meet deadlines.

- Timely identification of control weaknesses and fraud risks.
- Implementation of audit recommendations by shop and department managers.
