About the Role

We are seeking an exceptionally qualified, thoughtful, dynamic Senior Food & Beverage Manager to lead and elevate the culinary operations of a premier 5-Star Luxury Hotel in Trivandrum.

The ideal candidate will oversee multi-outlet dining operations, banqueting facilities and room service. This role requires an operational strategist with proven expertise in revenue optimisation, menu engineering, guest satisfaction and team leadership within high-volume, luxury hospitality environments.

Key Responsibilities

- Operational Excellence: Direct day-to-day operations across all fine-dining restaurants, specialised outlets, bars and high-capacity banqueting facilities to ensure 5-star brand compliance.
- Financial Management: Drive revenue growth, set operational budgets, manage food and labour costs, control inventory, and maximize profitability through strategic menu pricing and waste reduction.
- Guest Experience & Quality Control: Maintain flawless service standards, resolve guest escalations proactively, and build lasting customer relationships to drive positive reviews and repeat business.
- Team Leadership & Development: Recruit, mentor, and train outlet managers, head servers, and support staff. Foster a culture of high performance, accountability, and professional growth to reduce turnover.
- Vendor & Compliance Oversight: Manage supplier relationships, enforce strict FSSAI food safety protocols,



adhere to local licensing requirements, and maintain rigorous hygiene and sanitation standards.
- Cross-Departmental Collaboration: Work closely with the Executive Chef, Front Office, Sales & Marketing, and Engineering to deliver seamless corporate events, weddings, and VIP guest experiences.

Requirements & Qualifications

- Experience: 8–12 years of overall F&B; operational experience, with at least 3–5 years in a senior management role (F&B; Manager / Assistant F&B; Director) within a recognized 4-Star or 5-Star luxury hotel property.
- Education: Bachelor’s Degree or Diploma in Hotel Management, Hospitality Administration, or a related field.
- Technical Skills: Strong proficiency in POS systems (e.g., Opera, Simphony, POSist), inventory management software, P&L; analysis, and operational reporting.
- Core Competencies: Deep knowledge of international and regional culinary trends, beverage/wine pairings, banqueting logistics, and guest psychology.
- Leadership & Communication: Exceptional leadership skills with the ability to manage diverse teams. Excellent verbal and written communication skills in English (knowledge of Malayalam or additional languages is an added advantage).
