Role Description The Mochi Daifuku Chef is responsible for preparing, shaping, and finishing a variety of Mochi Daifuku and related Japanese desserts to Kairo Sushi’s quality standards. Day-to-day tasks include measuring and mixing ingredients, cooking mochi dough, preparing fillings, portioning and assembling desserts, and ensuring accurate presentation and plating. The role also involves maintaining hygiene and safety standards, organizing the dessert station, managing inventory of dessert ingredients,



and coordinating with the kitchen team during service. This is a full-time, on-site role based in Hyderabad, requiring flexible availability including weekends and holidays.
Qualifications

Hands-on experience or robust interest in pastry or dessert preparation, ideally with Japanese or Asian desserts such as mochi.
Knowledge of basic baking and confectionery techniques, including measuring ingredients, temperature control, and texture consistency.
Ability to maintain high food safety and hygiene standards, including proper storage, cleaning, and handling of ingredients and equipment.
Strong attention to detail in portioning, shaping, and presentation to ensure consistent quality and visual appeal.
Effective time management and organizational skills to handle multiple orders in a fast-paced kitchen environment.
Collaborative mindset and clear communication skills to work smoothly with chefs, service staff, and management.
