– FOOD TECHNOLOGIST | PRODUCT DEVELOPMENT

Position: Food Technologist – Product Development
Experience: 2–5 Years
Reporting To: Head – R&D; / Business Head
Industry: FMCG / Food / Snacks / Health & Wellness Products
Role Purpose To develop innovative, safe, commercially viable and consumer-focused food products across categories such as snacks, healthy foods, dry fruits, nuts, seeds, functional foods and other value-added food products—from concept to commercial launch.
Key Responsibilities
1. Current Product Development
- Develop new products, recipes, formulations, flavours and variants.
- Conduct laboratory, kitchen and pilot-scale trials.
- Convert successful trials into scalable commercial formulations.
- Develop products based on consumer needs, market trends and business objectives.
2. Product Improvement & Innovation
- Improve taste, texture, appearance, nutrition, shelf life and overall product quality.
- Research new ingredients, processing techniques, flavours and functional ingredients.
- Develop healthier alternatives with reduced sugar, oil, salt or other targeted nutritional improvements where required.
- Benchmark competitor products and identify opportunities for innovation.
3. Process & Scale-Up
- Establish standardized manufacturing processes and critical process parameters.
- Work with Production teams during pilot and commercial trials.
- Troubleshoot process and product-quality issues.
- Ensure consistency between laboratory formulation and commercial production.
4. Quality, Shelf Life & Food Safety
- Conduct sensory evaluation and product performance testing.
- Coordinate shelf-life, stability, microbiological and nutritional testing.
- Establish product specifications and quality standards.
- Ensure compliance with FSSAI, food safety, labelling and applicable regulatory requirements.
5. Cost & Commercialization
- Develop product BOMs and formulation specifications.
- Work with Procurement and Finance to achieve target product cost and margins.
- Evaluate alternative ingredients and suppliers for cost and quality optimization.
- Support packaging selection, nutritional information and product launch requirements.
6. Documentation & Cross-Functional Coordination
- Maintain formulation, trial, testing, specification and product-development records.
- Prepare SOPs, process sheets and product specifications.
- Coordinate with Production, QA/QC, Procurement, Packaging, Marketing and Sales.
- Support product launch and post-launch product improvement.
Key Performance Indicators
- Number of successful products developed and commercialized.
- Development time from concept to launch.
- Product quality, sensory acceptance and shelf-life.
- Achievement of target product cost and gross margin.
- Successful commercial scale-up.
- Innovation and improvement of existing products.
- Compliance with food safety and regulatory standards.
Qualification & Skills
- B.Tech / M.Tech / M.Sc. in Food Technology, Food Science, Dairy Technology, Nutrition or related field.
- Strong knowledge of food formulation, processing and ingredients.
- Understanding of sensory evaluation, shelf-life and food safety.
- Knowledge of FSSAI regulations and food labelling.
- Good analytical, problem-solving and documentation skills.
- Hands-on approach with strong experimentation and innovation mindset.
- Ability to work across snacks, dry fruits, nuts, seeds, health foods, functional foods and other FMCG food categories.
Ideal Candidate: A hands-on Food Technologist capable of taking a product from Concept → Formulation → Trial → Testing → Costing → Scale-up → Commercial Launch → Continuous Improvement.
Pay: ₹15,000.00 - ₹25,000.00 per month
