About the company:

Prayagh Consumer Care Pvt. Ltd. is looking for an experienced R&D; Manager Bakery to lead the development and innovation of bakery products, with a primary focus on cakes and cookies. The ideal candidate will be responsible for developing new formulations, improving existing products, driving cost optimization, and supporting commercial production while ensuring the highest standards of quality, food safety, and consumer satisfaction.

Key Responsibilities:

Product Development & Innovation
- Develop innovative cake and cookie formulations aligned with consumer trends and business objectives.
- Create new flavors, textures, and product concepts.
- Evaluate and introduce new ingredients, baking technologies, and manufacturing processes.
- Conduct product trials to optimize taste, texture, shelf life, and cost efficiency.

Process Development & Commercial Scale-Up




- Convert laboratory formulations into successful commercial-scale production.
- Plan and execute pilot and plant trials.
- Optimize mixing, baking, cooling, packaging, and processing parameters for consistent product quality.
- Provide technical support during new product commercialization.

Quality & Food Safety
- Ensure all product development activities comply with FSSAI, GMP, HACCP, and food safety standards.
- Conduct sensory evaluation, shelf-life validation, and product stability studies.
- Coordinate with QA and Production teams to resolve quality-related issues.
- Maintain accurate documentation of formulations, trials, specifications, and process parameters.

Cross-Functional Collaboration
- Work closely with Production, Quality Assurance, Procurement, Marketing, and Sales teams to ensure successful product launches.
- Lead and mentor Bakery Chefs, R&D; Executives, and junior team members.
