Job Summary

We are looking for an experienced Senior Chef de Partie – Continental to join our Base Kitchen/Commissary Kitchen team. The candidate will be responsible for continental food production, maintaining consistency and quality, supervising junior team members, and ensuring smooth daily kitchen operations as per company SOPs.

Key Responsibilities
- Lead and manage the assigned Continental production section at the base kitchen.
- Prepare sauces, dressings, stocks, marinades, pasta, sandwiches, salads, grills and other continental preparations as per standardized recipes.
- Follow recipe cards, portion controls and production specifications to maintain consistency.
- Plan and execute daily mise en place and production requirements based on demand and production plans.
- Supervise Commis Chefs and junior kitchen staff and allocate daily tasks.
- Ensure proper receiving, storage,



thawing, preparation, cooking, cooling and holding of food as per SOPs.
- Maintain food quality, hygiene, food safety and presentation standards.
- Monitor wastage and ensure optimum utilization of raw materials.
- Coordinate with the Stores, Purchase and Operations teams for ingredient availability and production requirements.
- Maintain production sheets, temperature logs, wastage records and other kitchen documentation.
- Ensure proper labelling, batch coding, shelf-life and storage of prepared products.
- Support recipe trials, new product development and menu standardization.
- Maintain cleanliness and hygiene of the workstation and ensure compliance with FSSAI and internal food safety standards.
- Ensure all equipment is used safely and report maintenance issues immediately.
- Assist the Sous Chef/Executive Chef in achieving daily production targets and maintaining kitchen discipline.
