Role Summary
Bhawan is looking for a Chef de Partie (Tandoor) to run the tandoor section of our kitchen with precision, consistency, and pace during service. This is a specialist station role, central to Bhawan's identity as a pan-regional Indian street food concept, and requires someone who can combine technical tandoor craft with an eye for consistency at volume.

Key Responsibilities

- Own and manage the tandoor station end-to-end: mise en place, marination checks, live cooking, and plating during service
- Maintain consistent char, smoke, and doneness across all tandoor items (kebabs, tikkas, breads) per Bhawan's standard recipe cards
- Monitor tandoor temperature, fuel/charcoal management, and equipment upkeep to ensure consistent output throughout service
- Coordinate closely with the CPK (central production kitchen) team on marinated protein deliveries, ensuring cold chain and freshness standards are met on arrival
- Track and manage daily mise en place quantities against covers forecast, minimising waste and stockouts
- Maintain hygiene, food safety, and HACCP standards at the station in line with FSSAI norms




- Train and guide commis chefs assigned to the tandoor section
- Flag ingredient quality issues, equipment faults, or consistency deviations to the Sous Chef/Head Chef immediately
- Participate in menu trials and new dish development for tandoor items as needed

Requirements

- Minimum 3-4 years experience on a tandoor station, ideally in a high-volume restaurant or QSR environment
- Strong understanding of marination science, dough and bread work (naan, roti, kulcha), and skewer craft
- Ability to work under pressure during peak service while maintaining consistency
- Basic understanding of food costing and portion control
- Willingness to work in a fast-paced, multi-outlet operating workplace

Reports to: Sous Chef / Head Chef
Location: Delhi NCR (specific outlet to be assigned)

Pay: ₹25,000.00 - ₹45,000.00 per month
