Job Summary
Grey Soul Coffee Roasters is looking for an experienced and passionate Head Chef to lead our kitchen operations.
The Head Chef will be responsible for food quality, kitchen operations, team management, menu execution, inventory, food cost, hygiene and kitchen efficiency. The ideal candidate should be hands-on, disciplined and capable of maintaining consistent food quality in a fast-paced café environment.
Key Responsibilities Kitchen Operations
- Manage the day-to-day operations of the kitchen.
- Ensure all food is prepared according to Grey Soul recipes and quality standards.
- Maintain consistency in taste, presentation and portion sizes.
- Ensure timely preparation and service of all food orders.
- Conduct quality checks before dishes leave the kitchen.
- Coordinate with the Store Manager and front-of-house team for smooth service.
Team Management
- Supervise, train and motivate the kitchen team.
- Allocate daily duties and manage kitchen shifts.
- Conduct regular kitchen briefings.
- Maintain discipline, teamwork and professional conduct.
- Train team members on recipes, preparation methods, hygiene and SOPs.
- Monitor staff performance and provide guidance where required.
Food Quality & Menu Development
- Maintain high standards of food quality and presentation.
- Standardize recipes and preparation methods.
- Assist in developing new dishes, seasonal specials and menu items.
- Conduct regular food tastings and quality checks.
- Ensure all recipes are followed consistently.
- Support management in menu planning and product development.
Inventory & Cost Control
- Monitor daily kitchen stock and consumption.
- Coordinate food procurement and vendor requirements.
- Conduct regular inventory checks.
- Maintain proper storage and FIFO/FEFO practices.
- Control food costs and minimize wastage.
- Monitor daily wastage,
damages and spoilage.
- Ensure proper portion control.
Hygiene & Food Safety
- Maintain high standards of kitchen cleanliness and sanitation.
- Ensure compliance with FSSAI and food safety standards.
- Monitor food storage temperatures and handling procedures.
- Ensure proper personal hygiene and grooming of kitchen staff.
- Maintain cleaning and sanitation schedules.
- Ensure kitchen equipment and workstations are kept clean and organized.
Equipment & Maintenance
- Ensure proper use and care of all kitchen equipment.
- Monitor equipment condition and report maintenance requirements.
- Ensure protected working practices are followed.
- Coordinate preventive maintenance when required.
Documentation & Reporting
- Maintain kitchen production and preparation records.
- Maintain inventory and consumption reports.
- Record and monitor daily wastage.
- Monitor food cost and kitchen performance.
- Submit required reports to management.
- Assist during internal audits and inspections.
Required Skills
- Strong leadership and kitchen management skills.
- Excellent knowledge of food preparation and cooking techniques.
- Strong understanding of food cost and inventory control.
- Menu planning and recipe development skills.
- Excellent time management and organizational skills.
- Ability to work under pressure during busy service.
- Strong attention to detail.
- Good communication and team-management skills.
- Knowledge of food safety and hygiene standards.
- Ability to maintain consistency in taste and presentation.
Qualifications
- Diploma or Degree in Hotel Management,
Culinary Arts or Hospitality preferred.
- FSSAI and food safety knowledge preferred.
Experience
- 2–4 years of relevant kitchen experience preferred.
- Minimum 1–2 years of experience as a Head Chef, Sous Chef, Kitchen Manager or similar senior kitchen role.
- Experience in cafés, specialty coffee shops, restaurants or premium hospitality is preferred.
- Experience with modern café menus and high-volume service will be an advantage.
Working Conditions
- 9-hour shift
- 6 working days per week
- Weekly off as per Company roster.
- Flexible to work weekends, holidays and rotational shifts.
- Ability to stand for extended periods.
- Comfortable working in a fast-paced kitchen environment.
- Work Location: In person – Fort, Mumbai
