Role Description
The Kitchen Stewarding Manager oversees all backend kitchen cleanliness, hygiene, equipment maintenance, and dishwashing operations across our resort's kitchens and banquet venues. This role ensures strict compliance with FSSAI hygiene guidelines, manages inventory for chinaware, glassware, silverware, and kitchen equipment, and leads a team of stewards to maintain seamless food preparation support.
Key Responsibilities
Oversee daily kitchen stewarding operations,



dishwashing areas, chemical usage, and waste management systems across all dining outlets and event facilities.
Maintain rigorous hygiene and sanitation standards in compliance with local regulations (FSSAI) and internal health and safety policies.
Manage inventory control, stock counts, and minimize breakage/loss of operating supplies (chinaware, glassware, flatware, and kitchen utensils).
Lead, schedule, and train the kitchen stewarding team on chemical handling, equipment operation, deep-cleaning schedules, and safety protocols.
Coordinate closely with Executive Chefs and the Food & Beverage team to support high-volume banquet operations and daily kitchen needs.
Manage relationships with sanitation chemical suppliers and stewarding equipment vendors to ensure smooth maintenance and cost efficiency.
