We’re looking for a Restaurant Manager to lead the floor at Sorano Mumbai.
This is a role for someone who genuinely loves restaurants — the rush of a full dining room, knowing your regulars, developing a great team, solving problems before guests notice them, and creating the kind of hospitality that makes people want to return.
Sorano Mumbai will move through different energies across the day — from lunch and dinner to aperitivo, drinks and a more energetic late evening.
We need someone who can run the room brilliantly through all of them.
What You'll Own
The Floor & Guest Experience
You will take ownership of the restaurant experience every day.
- Lead service across lunch, dinner, aperitivo and late evenings
- Be highly visible and present on the floor
- Personally engage with guests and build relationships with regulars
- Read the room and respond before small problems become big ones
- Handle guest recovery with maturity and confidence
- Maintain warmth and personality without compromising service standards
We don't want a manager who watches the restaurant from a desk.
We want someone who runs the room.
People & Culture
Build a front-of-house team that is confident, warm, knowledgeable and quick.
- Recruit, train and develop the FOH team
- Lead pre-shift briefings and daily service
- Coach rather than simply police people
- Build strong captains and supervisors beneath you
- Maintain discipline, grooming and service standards
- Create a culture where hospitality feels natural rather than scripted
Commercial Performance
A Restaurant Manager should understand the business behind the hospitality.
You will work towards:
- Daily and monthly sales targets
- Covers and table utilisation
- Average spend per guest
- Beverage and cocktail sales
- Upselling without making service feel transactional
- Labour productivity
- Controlling wastage, breakage and operating costs
- Improving weaker days and dayparts
