Experience Required: Minimum 5 Years in Specialty Coffee

Aura Plantation is looking for a passionate and experienced Specialty Coffee Manager / Coffee Processing Expert to lead and manage our specialty coffee harvesting, processing, quality control and post-harvest operations.

The ideal candidate should have solid practical knowledge of specialty coffee production and be passionate about creating exceptional coffees from farm to cup.

Key Responsibilities

- Manage and supervise the complete specialty coffee harvesting process.

- Train and guide the farm team on selective picking and harvesting only perfectly ripe coffee cherries.

- Develop and monitor coffee cherry quality standards, ripeness levels and harvesting protocols.

- Have strong knowledge of different coffee varieties and species, including Arabica and Robusta, and their quality characteristics.

- Plan and execute different specialty coffee processing methods, including:

- Natural Process

- Washed Process

- Honey Process

- Anaerobic Natural

- Anaerobic Washed

- Experimental and Controlled Fermentation Processes

- Monitor and record important processing parameters such as:

- Brix

- pH

- Temperature

- Fermentation Time

- Humidity

- Moisture Content

- Drying Conditions

- Manage fermentation, drying and storage processes to achieve consistent and high-quality specialty coffee.

- Maintain detailed lot-wise processing records and traceability.

- Conduct quality checks from cherry selection to green coffee preparation.

- Work closely with farm management to improve coffee quality, productivity and processing consistency.

- Develop new and innovative coffee processing experiments suitable for Aura Plantation's terroir and climate.





- Train farm workers and processing teams on hygiene, quality control and specialty coffee standards.

- Help develop Aura Plantation as a recognized producer of premium and specialty coffees.

Candidate Requirements

- Minimum 5 years of hands-on experience in specialty coffee harvesting and processing.

- Strong practical knowledge of coffee cultivation, harvesting and post-harvest processing.

- Excellent understanding of different coffee varieties and processing techniques.

- Experience in managing fermentation and experimental processing.

- Ability to identify high-quality coffee cherries and maintain strict harvesting standards.

- Knowledge of coffee drying, moisture management, storage and green coffee quality.

- Experience in maintaining processing records and quality-control documentation.

- Strong leadership skills and ability to train and manage farm teams.

- Passion for specialty coffee, innovation and continuous experimentation.

Preferred Qualifications

- Experience working with specialty coffee estates, exporters, roasters or specialty coffee brands.

- Knowledge of Q-Grading, cupping and sensory evaluation will be an added advantage.

- Experience with anaerobic and controlled fermentation techniques is highly preferred.

- Ability to independently manage coffee processing operations during harvest season.
