Position: Senior F&B; Cost & Compliance Controller
Department: Operations / Finance & Compliance
Location: Mumbai
Salary: ₹60,000 – ₹70,000 per month
Experience: 6–10 years of relevant experience
Reporting To: Directors / Founders
Job Summary
We are looking for an experienced Senior F&B; Cost & Compliance Controller to take complete ownership of F&B; cost control, inventory management, operational audits, statutory compliance coordination, and risk control across the company's outlets.
The position will work directly with the Directors / Founders and will provide independent oversight of cost, inventory, compliance, audit, and operational controls across multiple locations in India.
The candidate will be required to travel extensively across the company's outlets throughout India and must be willing to relocate to Mumbai.
Key Responsibilities
1. F&B; Cost Control
- Take ownership of overall Food & Beverage Cost % and ensure it remains within approved targets.
- Prepare and analyze daily, weekly, and monthly F&B; cost reports.
- Analyze theoretical vs. actual consumption and investigate significant variances.
- Identify food and beverage cost leakages arising from wastage, over-portioning, pilferage, incorrect entries, or inefficient utilization.
- Monitor recipe costing, standard yields, portion sizes, and menu costing.
- Recommend corrective actions and cost optimization strategies directly to the Directors / Founders.
2. Inventory & Stock Control
- Conduct regular and surprise physical stock audits across all outlets, kitchens, stores, and bars.
- Reconcile physical inventory with system records.
- Verify stock receipts, issues, transfers, returns, wastage, and consumption.
- Verify goods received against purchase orders, invoices, quantity, and quality.
- Monitor high-value and high-consumption items closely.
- Ensure implementation of FIFO/FEFO practices.
- Investigate stock discrepancies, unusual consumption, and potential pilferage.
- Establish strong inventory controls across all locations.
3. Legal & Statutory Compliance
- Monitor legal and statutory compliance requirements applicable to the company's hospitality and F&B; operations.
- Maintain a centralized compliance calendar for all outlets.
- Track licenses, registrations, renewals, inspections, statutory requirements, and regulatory deadlines.
- Ensure timely renewal and maintenance of applicable operational licenses and approvals.
- Maintain proper records of licenses, certificates, approvals, inspection reports, and statutory documents.
- Coordinate with external legal/compliance consultants and government authorities wherever required.
- Track compliance-related submissions, applications, renewals, and documentation.
- Conduct periodic compliance audits across all outlets.
- Identify compliance gaps and ensure corrective action is taken.
- Monitor statutory inspection observations, notices, and compliance-related communications.
- Support compliance with applicable food safety, fire safety, labour, Shops & Establishments, liquor/bar, municipal, and other operational requirements, as applicable.
- Immediately escalate significant legal, statutory, or regulatory risks to the Directors / Founders.
4. Internal Audit & Control
- Conduct periodic cost, inventory, operational, and compliance audits across all locations.
- Independently identify financial, operational, inventory, and compliance risks.
- Review adherence to company SOPs and internal control procedures.
- Investigate irregularities, discrepancies, and control failures.
- Prepare audit reports highlighting findings, financial impact, risks, and recommended corrective actions.
- Track corrective actions and ensure timely closure.
- Recommend improvements to strengthen internal controls and accountability.
5. Bar & Beverage Control
- Monitor beverage inventory and consumption across applicable outlets.
- Conduct regular bar stock verification and reconciliation.
- Monitor beverage wastage, complimentary consumption, breakage, and discrepancies.
- Identify potential revenue and cost leakages.
- Ensure proper documentation and compliance related to bar operations.
- Monitor applicable bar/liquor license validity and renewal requirements.
6. Management Reporting
- Prepare comprehensive F&B; Cost, Inventory, Compliance, Audit, Variance, and Risk Reports.
- Present key findings and exceptions directly to the Directors / Founders.
- Highlight outlet-wise cost performance, compliance gaps, stock discrepancies, and operational risks.
- Provide actionable recommendations for cost reduction and risk mitigation.
- Maintain centralized dashboards/reports for management review.
- Ensure timely reporting of critical issues without waiting for periodic reporting cycles.
Travel & Mobility Requirements
- Extensive travel across India is mandatory.
- Regular visits to company outlets will be required for stock audits, compliance checks, operational audits, and process reviews.
- Candidate must be willing to relocate to Mumbai.
- Candidate should be comfortable with frequent domestic travel and extended stays at different locations when required.
- The role requires flexibility to travel based on business and audit requirements.
Candidate Profile
- Solid knowledge of F&B; Cost Control, Inventory Control, Auditing, and Compliance Management.
- Strong understanding of hotel, restaurant, kitchen, and bar operations.
- Working knowledge of hospitality-related statutory and regulatory requirements.
- Strong analytical, investigative, and problem-solving abilities.
- Excellent knowledge of MS Excel and reporting.
- Experience with POS, ERP, inventory, or hotel management systems.
- Strong documentation and record-keeping skills.
- Excellent communication, follow-up, and coordination skills.
- High level of integrity, accountability, and confidentiality.
- Ability to work independently and report directly to senior management.
- Comfortable challenging operational practices when required to protect company interests.
Qualification & Experience
- Degree/Diploma in Hotel Management, Hospitality Management, Finance, Accounting, Compliance, or a related field.
- 6–10 years of relevant experience in F&B; Cost Control, Audit, Compliance, or Hospitality Operations.
- Experience in hotel, restaurant chain, multi-outlet F&B;, or hospitality operations preferred.
- Experience handling Food Cost + Inventory + Statutory/Operational Compliance will be strongly preferred.
