Job Description:

We are looking for a skilled and hardworking Commi 1 – Vegetarian South Indian Cuisine for our kitchen team in Kalyan. The candidate should have hands-on experience in preparing South Indian vegetarian dishes, daily mise-en-place, batter handling, chutney preparation, sambar, rasam, rice items, snacks, and basic production work.

The ideal candidate should be clean, disciplined, quick during service, and able to maintain consistency in taste, hygiene, portioning, and food preparation as per kitchen standards.

Key Responsibilities:
- Prepare vegetarian South Indian dishes under the guidance of the CDP / Head Chef.
- Handle dishes such as idli, dosa, uttapam, vada, upma, pongal, sambar, rasam, chutneys, lemon rice, curd rice, tomato rice, bisibele bath, and basic thali items.
- Manage daily mise-en-place including cutting, chopping, grinding, batter preparation, chutney preparation, portioning, and basic cooking.




- Support live dosa/idli service, breakfast service, thali service, bulk preparation, and rush-hour kitchen operations.
- Maintain consistency in taste, portion size, quality, and presentation.
- Follow standard recipes, preparation methods, and instructions from senior chefs.
- Maintain proper hygiene, cleanliness, grooming, and food safety standards at all times.
- Follow FIFO, proper storage, labelling, and wastage control practices.
- Keep workstation, equipment, utensils, storage areas, refrigerators, dosa counter, and cooking section clean and organized.
- Inform seniors about low stock, spoilage, wastage, breakage, or equipment issues.
- Support the kitchen team during opening, closing, cleaning, and preparation duties.

Candidate Requirements:
- Prior experience as Commi 1, Commi 2, Cook, or Kitchen Assistant in a vegetarian South Indian kitchen preferred.
