- Manage the overall day-to-day operations of the hospital canteen.
- Ensure timely preparation and serving of food as per the approved menu and schedule.
- Supervise cooks, helpers, cleaning staff, and other canteen personnel.
- Ensure food quality, taste, quantity, freshness, and proper portion control.
- Maintain high standards of cleanliness and hygiene in the kitchen, dining area, utensils, equipment, and storage areas.
- Ensure compliance with hospital infection-control and food-safety requirements.
- Ensure proper storage of raw materials, cooked food, dairy products, vegetables, and other food items.
- Check the quality and expiry dates of all food materials received.
- Maintain proper stock and inventory records of groceries, vegetables, dairy products, LPG, packaging materials, and other consumables.
- Prepare purchase requirements and coordinate with the Purchase/Stores Department for timely availability of supplies.
- Minimize food wastage and monitor consumption and costs.
- Ensure proper segregation and disposal of food waste as per hospital policy.
- Ensure secure handling of LPG, electrical appliances, cooking equipment, and other kitchen equipment.
- Monitor food preparation for patients as per prescribed dietary requirements, wherever applicable.
- Coordinate with the Dietician/Nursing Department regarding special diets for patients.
- Ensure that patient diets are prepared, labelled, and delivered to the respective wards on time.
- Maintain records of patient diets, staff meals, sales, stock, wastage, and other required registers.
- Monitor canteen sales and ensure proper collection and submission of cash/online payments as per hospital policy.
- Prevent unauthorized consumption, pilferage, and misuse of canteen materials.
- Handle complaints and feedback regarding food quality and service and take corrective action.
- Ensure adequate staffing and proper duty allocation for canteen employees.
- Monitor attendance, punctuality, discipline, grooming, and personal hygiene of canteen staff.
- Ensure all food handlers use appropriate uniforms, head covers, gloves, masks, and other required protective equipment.
- Conduct regular checks of refrigerators, freezers, cooking equipment, exhaust systems, and other facilities.
- Ensure pest-control measures are followed as per hospital schedule.
- Coordinate during hospital inspections, audits, and accreditation activities.
- Ensure compliance with applicable food safety and hygiene requirements, including FSSAI requirements where applicable.
- Perform any other duties assigned by the Hospital Administration/Management.
